Ingredients

  • 1 (12 ounce) jar apricot preserves
  • cup prepared Dijon-style mustard
  • 1 teaspoon curry powder
  • 4 skinless, boneless chicken breast halves
  • 1 cup coarsely chopped cashews

Directions

  1. Preheat the oven to 375F (190C).
  2. In a large skillet, combine the apricot preserves, Dijon mustard, and curry powder. Heat over low heat, stirring constantly until the preserves have fully melted and the sauce is smooth.
  3. Place the chopped cashews in a shallow dish or bowl. Dip each chicken breast into the skillet sauce, ensuring its well coated, then roll it in the cashews to coat evenly.
  4. Transfer the coated chicken breasts to a lightly greased 9x13-inch baking dish.
  5. Bake the chicken at 375F (190C) for 20 to 30 minutes, or until fully cooked and golden brown.
  6. If any sauce remains, bring it to a boil and serve it on the side with the baked chicken.

I have used numerous recipes from All Recipes over the years, and most of them have turned out wonderfully. Unfortunately, this particular recipe was a disappointment from the start. The dish lacked any discernible flavor, and the cashews didn't stick well to the chicken. It ended up tasting like plain, flavorless baked chicken. Additionally, the recipe created a significant mess both in the frying pan and the baking dish. Proceed with caution if you decide to give this recipe a try.
