Ground Beef Green Chili Casserole Recipe
Cheesy Beef and Chile Casserole
This hearty casserole is a crowd-pleaser with its layers of ground beef, melted cheese, and green chiles, all tucked between soft corn tortillas. Perfect for a family dinner or a casual gathering.
Ingredients
- 1 pound ground beef
- 8 (6-inch) corn tortillas
- 1 small onion, diced
- 1 pound processed cheese food, shredded
- 1 (4-ounce) can green chile peppers, chopped
- 1 (10.75-ounce) can condensed cream of chicken soup
- cup milk
Directions
- Preheat your oven to 325F (165C) and lightly grease a medium-sized casserole dish.
- In a medium skillet over medium heat, cook the ground beef until browned evenly, making sure to drain any excess fat.
- Layer half of the tortillas on the bottom of the prepared casserole dish, then spread half of the diced onion, shredded cheese, cooked beef, and chopped green chiles over them.
- Add another layer with the remaining tortillas, followed by the remaining onion, half of the remaining cheese, the rest of the ground beef, and the remaining chiles.
- In a medium bowl, mix the cream of chicken soup with the milk. Pour this mixture evenly over the casserole.
- Bake in the preheated oven for 30 minutes. After 30 minutes, sprinkle the remaining cheese over the top of the casserole and bake for an additional 5 to 10 minutes, or until the cheese is fully melted and bubbly.

I thoroughly enjoyed this recipe! I incorporated suggestions from others and made adjustments for lower fat and calorie content. I sprayed a 9x13" pan with nonstick cooking spray, used only 4 taco-sized flour tortillas, added a taco seasoning packet to the beef along with onions and chilis to save time on assembly. I doubled the amount of chilis by using two 4oz cans, used approximately 3 cups of Sargento shredded reduced fat Mexican cheese, opted for Campbell's Healthy Request cream of chicken soup, and served it with low-fat sour cream, tomatoes, and lettuce. The result was fantastic! :)

This dish turned out fantastic! I followed some suggestions to elevate the flavors. I incorporated taco seasoning into the ground beef and sautéed the onions for extra depth. Layering tortilla chips at the base of the pan along with a soup and milk mixture created a wonderful texture. To preserve the Mexican essence, I included a dash of adobo seasoning in the soup mix. Diced tomatoes and jalapeno olives added a spicy kick to the dish. My version ended up being on the spicier side, but I thoroughly enjoyed the burst of flavors and heat.

I decided to try this recipe based on others' recommendations and opted for using sharp cheddar cheese. I seasoned the ground beef with garlic powder, onion powder, chili powder, ground oregano, salt, and pepper for added flavor. I also added 2 cans of hot chilies and half a red onion, chopped. The crispy texture of the onions in the dish really stood out to me. I will definitely be making this again!

I absolutely adore this recipe! I sautéed the onions together with the meat, threw in an additional can of green chiles, and opted for cheddar cheese instead. I'm thinking of trying it with Monterey Jack cheese next time. I also seasoned the meat with a blend of salt, pepper, and garlic powder. Note that you might want to double the ingredients if you plan on using a 9x13 pan.

I would give it 5 stars after making some revisions. Absolutely delicious! After reading several reviews, I decided to make the following changes: (1) Reduced the amount of cheese and used Monterey Jack and cheddar instead. (2) Sauteed 2 jalapeno peppers and 2 cloves of garlic with the meat and onion. (3) Used 7oz of green chilis instead of 4, and my husband still added hot sauce! (4) Topped the casserole with slices of tomatoes and cilantro, which, in my opinion, elevated the dish even more. It turned out incredibly tasty!

The provided recipe is a great starting point. I made a few substitutions, using a can of tomatoes with chilies instead of just chilies. After browning the meat and onions, I added the tomato mixture and cooked it on high heat to reduce the liquid. I seasoned the beef with taco seasoning, cumin, garlic powder, and chili powder. Corn adds a nice touch to this casserole. I only used 4 tortillas and a mix of white American and sharp cheddar cheese. It's a quick and easy meal to prepare, perfect when served with black beans. So simple to make and a big hit with my husband! Following the advice of others, I cooked the beef with onions and chiles, then added taco seasoning, garlic powder, and cumin for extra flavor. I might add an extra can of chiles next time, but it turned out delicious with just one. I used large burrito tortillas and substituted Golden Mushroom soup, which worked great. Quick to assemble and my husband loved it instantly. I might experiment with different spices next time, but this recipe is definitely a keeper!

I absolutely adored this recipe! I incorporated a can of mild green chiles and a can of hot green chiles, mixing them together for a perfect balance of flavors. Simply seasoned the meat with salt and pepper, and melted colby/jack shredded cheese on top. I'm making it again tomorrow for the second time! Adding a dollop of sour cream on top really tops it off perfectly!

I tried this recipe twice. The first time, it was quite flavorless (do people forget to season their food these days?). The second time, I added fresh garlic, ground cumin, and smoked paprika to my meat for seasoning. I also skipped the Velveeta cheese both times (not a fan) and used freshly grated extra sharp cheddar cheese instead.

The casserole turned out a bit dry, probably due to not adding enough red pepper flakes, but we still enjoyed it! I opted for Pinto beans instead of Kidney beans, simply a personal preference. Next time, I plan to enhance the flavors by adding a packet of taco seasoning along with some water and tomato sauce. Can't wait to make it again!
