John's Broccoli and Ziti Casserole Recipe

Ingredients

  • 1 (16 ounce) package ziti pasta
  • cup olive oil
  • 1 (16 ounce) package chopped frozen broccoli, thawed
  • 6 cloves garlic, minced
  • 2 (8 ounce) packages shredded mozzarella cheese, divided
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 350F (175C).
  2. Bring a large pot of lightly salted water to a boil. Add the ziti pasta and cook for 8 to 10 minutes, or until al dente. Once cooked, drain the pasta.
  3. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the thawed broccoli and minced garlic to the skillet, sauting until tender and fragrant.
  4. In a large mixing bowl, combine the sauted broccoli and garlic with the cooked pasta. Add 1 packages of shredded mozzarella cheese and mix everything together until well combined.
  5. Transfer the mixture into a 9x13 inch baking dish, spreading it evenly.
  6. Sprinkle the remaining mozzarella cheese on top of the pasta and broccoli mixture.
  7. Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and lightly browned on top.

I mistakenly attempted the recipe a second time, thinking I must have misinterpreted it the first time. However, the dish turned out to be incredibly dry, prompting me to add Cream of Chicken soup to salvage it.
