Easy Enchiladas Recipe
Ingredients
This recipe was developed with its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
Original Recipe (1X) yields 10 servings:
- 2 (16 ounce) jars prepared salsa
- 1 pound ground beef
- 1 (15.5 ounce) jar prepared salsa con queso
- 20 (8 inch) flour tortillas
- 1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend
Directions
- Preheat the oven to 350F (175C). Grease a 9x13 inch baking dish and pour the salsa into the bottom of the dish. Set aside.
- Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, or until the meat is browned and crumbly.
- Drain the excess grease from the beef, then add the salsa con queso to the skillet. Stir to combine well.
- Take about 2 tablespoons of the beef mixture and place it down the center of each tortilla. Roll up the tortillas and place them seam side down on top of the salsa in the prepared baking dish.
- Sprinkle the shredded cheese evenly over the top of the enchiladas.
- Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted, browned, and the enchiladas are hot and bubbly.
Editor's Note
You can swap the ground beef for cheese, ground or shredded chicken, steak, or shredded beef to customize the recipe to your taste.

Quick and easy. My husband prefers these to the "real" thing. The only thing I do differently is to use enchilada sauce (canned) instead of salsa.

This was fantastic. I used Pace chunky salsa but drained it to add the juice to a can of enchilada sauce. I also added garlic powder and Cajun seasoning to the meat mixture. I put the drained salsa in the beef mixture as well adding the thick paste and veggies from the salsa. I added just a bit of cheese to the meat filling because no one ever said it had too much cheese.

I enjoyed this recipe with the changes I made. I cut recipe in half and used a 5" x 9" dish. I used 5 tortillas and 10 oz. of hamburger meat. Unfortunately, my wife does not like salsa con queso so she would not eat it.

I had my groceries delivered due to COVID-19, and instead of the Cheez Whiz I had ordered ( my husband eats it on his toast for breakfast), they gave me Tostitos cheese dip with salsa. Hubby won't eat it (allergic to everything!); what do I do with it? So of course I got on the AR site and searched "cheese sauce with salsa" and up popped this recipe. It would never have occurred to me to mix it in the filling while it was in the frying pan! So I did-- though I admit I added some peppers, shallots and tomatoes to it also-- then filled a couple tortillas, put salsa on top, sprinkled with cheese, and microwaved it. My dinner done!!! It was sooo good, tasted just like the ones at our local restaurant, which I never get unless I go to lunch with my friends. The leftover filling will be lunches for the week. MaryG

This was a good starting point recipe, but I changed quite a bit. First off 1lb of ground beef only made 9 enchiladas. Instead of using chili con queso I added chunky salsa and shredded cheddar to the ground beef mixture. I used 1 can of enchilada sauce over them once in the casserole and some also under them to coat bottom of dish. Then I sprinkled additional shredded cheddar over the top and some chopped fresh bell pepper to garnish" I baked at 350 for 30 minutes" it was delicious, I also served an herb rice dish on the side.

Of course I’ve made changes to fit our taste…after 3-4 times making it various ways…I use cheese inside above the salsa con queso (co-Jack, Jack….), salsa on the bottom of pan & enchilada sauce on top…found 2 salsas was too much so substituted enchilada sauce for one of the salsas…top with Mexican mix cheese….mmmmmm

I love how easy this was to make! Very creamy beef mixture compliments the tomato salsas and topping cheese. I would not change anything! Note: I did use more filling in each enchilada so I did not use 20 tortillas. Also, you must use two baking dishes (at least) to fit 20 tortillas in!

Great kick off for my own twist on these, thank you! I cooked ground beef, drained, added chopped jalepeno and onion. Then added can of chili beans in spicy sauce, heated until bubbling. Used healthy veg tortillas put Mexican blend cheese on top inside before rolling and put enchilada sauce on top. Made 8 good sized enchiladas. Delicious! Husband loved them! I’ll get two meals from this for us:) Will def make again!

This was excellent!!! My wife thinks I am the King of the kitchen. I did not use any salsa at all, just added cheese (sharp), taco seasoning, and red sauce (one can) to 3 lbs. of ground hamburger. I also added cheese to the inside of the enchiladas. Ummm Ummmm GOOD!!!!!!!

This is a great recipe except it was too tomato tasting so I mixed a half of one of the jars of salsa with one can of cream of chicken soup, used half of that in the chicken stuffing, not hamburger, then rolled and placed on top of salsa in pan. I used rest of half and half mixture on the top, covered with foil, baked 20 minutes then uncovered, topped with cheese and finished baking.

I can’t have the queso so I used diced tomatoes with green chilies and and I used red enchilada sauce instead of salsa. Turned out delicious

Really good family loved it. I just could not find Salsa con queso unless it was a cheese which was kinda a disappointment

This was a quick, easy meal to throw together! There are better enchiladas recipes, but for having only 5 simple ingredients, you can't beat it! This is a quick meal to put together, it tastes good, and it's filling. It will definitely be a staple in my kitchen and on my menu from now on!

It was very easy and delicious. One person said to only use corn tortillas instead of flour. I disagree, you can use either. I use both and they work out well. I always say, don't be so picky and try it out for yourself.

"Enchiladas" are made with corn tortillas. These are smothered burritos, casserole style, which are made with flour. The recipe itself is bonafide, is tasty! But, the name IS important to most of us.
