Spicy Chicken Noodle Soup Recipe

Ingredients

  • 2 skinless, boneless chicken breast halves, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 3 carrots, sliced
  • cup frozen corn
  • 1 (8 ounce) package dried thin rice noodles
  • 1 red bell pepper, diced
  • 1 teaspoon dried basil
  • teaspoon chili pepper flakes (or to taste)

Directions

  1. In a large pot, cook and stir the diced chicken over medium heat until lightly browned, about 5 minutes.
  2. Add the minced garlic and continue cooking for another minute until fragrant.
  3. Stir in the vegetable broth, sliced carrots, and frozen corn. Bring the mixture to a boil.
  4. Once boiling, add the rice noodles, diced red bell pepper, dried basil, and chili flakes. Reduce the heat to a simmer.
  5. Let the soup simmer for about 5 minutes, or until the noodles are tender and fully cooked.

If it weren't for the chili flakes, this dish would be quite bland, but it serves as a good foundation for personalizing to your liking. I decided to enhance it by incorporating chipotle pepper flakes for a smoky kick and some oregano for added flavor. In my next attempt, I'll reduce the amount of rice noodles to 4 ounces as they soaked up a majority of the broth. To give it a unique twist, I used spiralized carrots.

I made this soup using the base recipe and made some adjustments to the vegetables based on what I had at home. The level of spiciness was acceptable for my kids. For my portion, I added some sambal oelek and Thai chilies. I used rice vermicelli, soaked them in hot water until soft, and then added them to the bowls before ladling the soup over them.
