If it weren't for the chili flakes, this dish would be quite bland, but it serves as a good foundation for personalizing to your liking. I decided to enhance it by incorporating chipotle pepper flakes for a smoky kick and some oregano for added flavor. In my next attempt, I'll reduce the amount of rice noodles to 4 ounces as they soaked up a majority of the broth. To give it a unique twist, I used spiralized carrots.

I made this soup using the base recipe and made some adjustments to the vegetables based on what I had at home. The level of spiciness was acceptable for my kids. For my portion, I added some sambal oelek and Thai chilies. I used rice vermicelli, soaked them in hot water until soft, and then added them to the bowls before ladling the soup over them. Thanks for sharing this recipe!
