Fresh Rosemary Chicken Thighs

Herb-Rubbed Baked Chicken Thighs

Ingredients

  • 1 tablespoons chopped fresh rosemary leaves
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • teaspoon ground black pepper
  • 4 chicken thighs
  • Olive oil cooking spray

Directions

Step 1: Preheat your oven to 350F (175C).

Step 2: In a bowl, combine the rosemary, lemon zest, salt, and pepper.

Step 3: Rub the mixture evenly over the chicken thighs.

Step 4: Place the chicken thighs in a baking dish and spray with olive oil cooking spray.

Step 5: Bake in the preheated oven for 35 to 40 minutes, or until the chicken is no longer pink in the center and the juices run clear. The internal temperature should reach at least 165F (74C) when measured with an instant-read thermometer.

Made as written and these turned out pretty good. They were very flavorful. The recipe did not specify whether to use skinless boneless thighs or skin on. I used skin on because I wanted to be able to stick them under the broiler for a few minutes in the end to get some crisp to them. This was easy to throw together and the fresh rosemary makes a big difference in flavor.

I liked it and my husband who really does not care for chicken even liked it. I did tweak it a little. I used recipe to prepare 4 chicken thighs and 1 skinless boneless chicken breast. I didn't have a fresh lemon for the zest so I used lemon juice instead. After the baking - I sprayed olive oil in a pan and browned the pieces, it was delicious. I will definitely make this again!

This was delicious, a definite keeper for me. I made it according to the instructions, but i ended up needing about twice the seasoning indicated. I squeezed some lemon juice into the lemon zest/rosemary mixture to create a thick slurry, then brushed the chicken with that. Baked uncovered for 40min. It came out great. So easy, so quick, and so good.

Delicious and easy. A big hit for inner. Served with butter sauteed mixed kale, chard, broccoli and onion. Saving thisand will definitely make again many more times.
