Baked Chicken Thighs with Marmalade-Mustard Sauce Recipe

Ingredients

  • 4 boneless chicken thighs
  • Salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • cup orange marmalade
  • cup bourbon
  • cup yellow mustard
  • cup onion, diced
  • 2 cloves garlic, minced

Directions

  1. Preheat the oven to 350F (175C).
  2. Season chicken thighs with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium heat. Brown the chicken on both sides, about 2 minutes per side.
  4. Transfer the browned chicken thighs to an 8-inch square baking dish.
  5. In a small bowl, combine orange marmalade, bourbon, mustard, onion, and garlic.
  6. Pour the sauce mixture into the skillet and cook, whisking over medium heat to cook off the bourbon, for about 2 minutes.
  7. Pour the sauce over the chicken thighs in the baking dish.
  8. Bake, uncovered, in the preheated oven for about 25 minutes, or until the chicken is no longer pink and the juices run clear. The internal temperature should read 165F (74C) when checked with an instant-read thermometer.

I tried the sauce before letting the alcohol cook off and was a bit hesitant at first because of its bold and sharp taste. However, the combination of bourbon, mustard, and marmalade became incredibly intriguing and complex once cooked down. I will definitely be making this dish again, as it was a simple measure, dump, and cook meal that turned out to be delicious. There are some evenings when you simply don't feel like preparing food.

Straightforward and tasty recipe! I followed the directions exactly, although I substituted Dijon mustard since that's all I had at home. I used skinless, boneless chicken thighs. The cooking time in the oven was perfect, and I allowed the chicken to rest for about ten minutes before serving it with saffron rice and garnished with chopped green onions.
