Keto Smoky Chicken and Vegetable Sheet Pan Dinner Recipe

Original recipe (1X) yields 4 servings:
- 1 head broccoli, cut into florets
- head cauliflower florets
- medium head red cabbage, cut into wedges
- cup olive oil
- 1 teaspoon sea salt
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 4 boneless, skinless chicken thighs
- 8 slices bacon
Directions
- Preheat the oven to 400F (200C). Line a large rimmed baking sheet with aluminum foil.
- In a large bowl, combine the broccoli, cauliflower, and cabbage. In a separate measuring cup, whisk together the olive oil, sea salt, and smoked paprika. Pour the mixture over the vegetables and gently stir to coat all the vegetables evenly. Set aside.
- On a flat plate, combine the chili powder, cumin, and garlic powder. Roll each chicken thigh in the spice mixture, ensuring both sides are evenly coated.
- Wrap two slices of bacon around each chicken thigh and place them in the center of the prepared baking sheet.
- Give the vegetables one last gentle stir and scatter them around the chicken in an even layer.
- Bake in the preheated oven for 35 to 40 minutes, or until the bacon is crispy, the chicken is no longer pink in the center, and the juices run clear. An instant-read thermometer inserted into the center of the chicken should read at least 165F (74C).

To achieve a crispy texture on the bacon, pre-cook it for approximately 1 1/2 minutes on each side before wrapping it around the chicken. Additionally, mix in a couple of halved green onions and some fresh thyme sprigs with the vegetables for added flavor.

The spice blends work wonders for both meat and vegetables. I highly recommend pre-cooking the bacon slightly before adding it - the final result will be spot on.

I substituted Brussels sprouts for the cabbage in this recipe, and it turned out amazing! I followed the rest of the recipe exactly as written.
