Grilled Lemon Chicken Recipe

Grilled Chicken with Lemon Dijon Marinade

Servings: 4

Ingredients

  • cup lemon juice
  • cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 large cloves garlic, finely chopped
  • 2 tablespoons finely chopped red bell pepper
  • teaspoon salt
  • teaspoon ground black pepper
  • 4 skinless, boneless chicken breast halves

Directions

  1. In a medium bowl, combine lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and black pepper. Stir well to mix.
  2. Reserve cup of the marinade for basting during grilling. Place the chicken breasts in the remaining marinade and toss to coat evenly. Cover and refrigerate for at least 20 minutes to allow the flavors to infuse.
  3. Preheat the grill to high heat. Lightly oil the grill grate to prevent sticking.
  4. Remove the chicken from the marinade, shaking off any excess. Discard the remaining marinade in the bowl.
  5. Grill the chicken on the preheated grill for 6 to 8 minutes per side, or until the chicken is no longer pink in the center. Occasionally baste the chicken with the reserved marinade.
  6. Use an instant-read thermometer to check the chicken's internal temperature. It should read at least 165F (74C).

Decent, but not as tasty as expected... I'll definitely marinate it for a longer period next time, maybe more than 20 minutes.

I tried this recipe for the first time last night and it was so delicious that I'm preparing it again tonight for my husband. Since my grill ran out of gas, I cooked the chicken in a pan with the marinade. It came out crispy and flavorful! The recipe was simple to follow and I had all the ingredients on hand. I will definitely be making this again!

I marinated a whole chicken using a mixture of 1/2 cup of beer, crushed oregano, and cumin since I didn't have mustard. After letting it marinate for 2 hours, I split the chicken down the back before grilling. Before grilling, I seasoned it with salt, pepper, paprika, more cumin, garlic powder, and cayenne pepper for some heat, then pressed it down with a brick covered in foil on the grill. Grilled for 10-15 minutes on each side. The result was absolutely delicious!

Wow! This chicken was fantastic! I marinated it for around 5 hours, which resulted in incredibly tender meat. I slightly reduced the amount of Dijon mustard used (about 2 tsp. instead of a tablespoon) to balance the flavors with the lemon. The end result was absolutely delicious!

This recipe was simple and tasty. We marinated the chicken for 2 hours and cooked it in a pan on the stove. Since we didn't have a red bell pepper, we used a green one instead. We decided to pour in the remaining marinade and let it simmer on low heat. To make it more filling, we tossed in some leftover spaghetti noodles and added capers, resulting in a delightful meal.

This dish is wonderfully quick and easy to prepare. The chicken turned out incredibly juicy. I adjusted the recipe slightly by using only about 3/4 teaspoon of mustard to avoid an overpowering flavor. Super simple and packed with flavor. Make sure to marinate for at least an hour for the best results. After just 20 minutes, most of the flavors dissipate, so it’s important to let the chicken soak in the marinade for longer.
