Cumin Lamb Steaks with Smashed Potatoes, Wilted Spinach and Red Wine Sauce Recipe

Ingredients

This recipe serves 4 and all quantities are scaled from the original recipe. Cooking times remain unchanged.

  • 20 new potatoes, halved
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 cup red wine
  • 4 lamb shoulder steaks (6 ounces each)
  • Salt and pepper, to taste
  • 1 tablespoon cumin seeds
  • 1 tablespoon vegetable oil
  • 2 bunches fresh spinach, cleaned
  • cup sour cream
  • 2 tablespoons softened butter

Directions

  1. Step 1: Place the halved potatoes in a large saucepan and cover with salted water. Bring to a boil, then lower the heat to medium-low. Cover and simmer until tender, about 15 minutes. Drain and let steam dry for a couple of minutes.
  2. Step 2: In a separate saucepan, melt 1 tablespoon of butter over medium heat. Add the minced garlic and cook for 3-4 minutes until fragrant but not browned.
  3. Step 3: Stir in the brown sugar and pour in the red wine. Increase heat to medium-high and bring to a gentle boil. Let it cook for 5 minutes, then remove from heat, cover, and keep warm.
  4. Step 4: Season the lamb steaks with salt and pepper. Press cumin seeds into both sides of the meat to ensure even coating.
  5. Step 5: Heat vegetable oil in a large skillet over medium-high heat. Add the lamb steaks and cook for approximately 4 minutes per side for medium doneness, adjusting time as needed. Transfer steaks to a warm plate to rest.
  6. Step 6: In the same skillet, add the fresh spinach. Season with salt and pepper and cook until just wilted, about 2-3 minutes.
  7. Step 7: Mash the drained potatoes with sour cream and softened butter. Season to taste with salt and pepper until creamy and smooth.
  8. Step 8: To plate, place a mound of mashed potatoes in the center of each plate. Layer the wilted spinach on top, then add a lamb steak. Strain the red wine sauce over the steak and serve immediately.

Great experience! The dish was excellent overall, but the shoulder meat was a bit tough. Next time, I'll dice it and sauté it instead. The presentation was lovely with spinach at the base, potatoes creating a well for the lamb, and a delicious sauce drizzled on top. The sauce was particularly delightful. While I think rosemary could work well as a substitute for cumin, the cumin added a nice touch.

I didn't make the potatoes, but I did try out the recipe for the Lamb Steaks, and they were absolutely delicious! Everything turned out amazing. Since I was out of cumin seeds, I substituted them with a mix of salt, pepper, and cumin seasoning for the rub. The red wine reduction sauce was prepared as instructed and it was simply divine. I wholeheartedly endorse this recipe for all lamb lovers out there.

My husband absolutely loved this dish! I followed the recipe exactly, except I swapped spinach and sour cream for cream cheese in the potatoes and used less spinach. I will definitely be making this again. So delicious!

I have prepared this dish multiple times for guests who had never tried lamb before, and everyone thoroughly enjoyed it. I like to enhance the wine sauce with mushrooms and add shredded cheese to the potatoes. The spinach is delicious both as a salad and wilted, so I often serve it both ways.
