Company Casserole Recipe

Original recipe (1X) yields 5 servings
- 1 (8 ounce) package egg noodles
- 1 pound lean ground beef
- 1 onion, chopped
- 2 (7 ounce) cans tomato sauce with mushrooms
- 1 teaspoon salt
- teaspoon black pepper
- teaspoon ground cinnamon
- 1 cup cottage cheese
- cup chopped green onions
- cup shredded Cheddar cheese
Directions
Follow these simple steps to make this comforting dish:
- Preheat your oven to 350F (175C).
- In a large pot, bring lightly salted water to a boil. Add the egg noodles and cook for 8 to 10 minutes, or until they are al dente. Once cooked, drain the noodles and set them aside.
- In a skillet over medium heat, brown the ground beef along with the chopped onion until the beef is no longer pink. Drain any excess fat from the skillet.
- Add one of the cans of tomato sauce, salt, black pepper, and cinnamon to the skillet with the ground beef mixture. Stir to combine.
- Transfer the beef mixture to a shallow 3-quart casserole dish.
- Spread the cooked noodles evenly over the beef mixture in the casserole dish.
- Top the noodles with a layer of cottage cheese, followed by the chopped green onions and shredded Cheddar cheese.
- Pour the remaining can of tomato sauce over the top, ensuring everything is well-covered.
- Place the casserole in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly.

Fantastic meal that is simple to make and enjoyed by children! I opted for regular tomato sauce and included my favorite mushrooms. Additionally, I mixed in around 1/2 cup of spaghetti sauce and extra cheese. After cooking, I topped it off with a sprinkle of parmesan. This dish is so adaptable - you can add any spices you prefer. We paired it with a salad and rolls. Delicious!

This casserole was simple to put together and reminded me of a simplified version of lasagna. I plan to omit the cinnamon next time as it felt like it took away from the overall flavor rather than enhancing it.
