Mexican Mostaccioli Recipe

- 1 (16 ounce) package mostaccioli pasta
- 1 pound ground beef
- 1 (24 ounce) jar picante sauce
- 1 (15 ounce) can stewed tomatoes with juice
- 1 cups shredded Mexican-style cheese
Directions
Step 1: Bring a large pot of lightly salted water to a rolling boil. Add the mostaccioli and cook until tender but still firm, about 11 minutes. Drain and set aside.
Step 2: In a separate large pot, cook the ground beef over medium-high heat. Stir frequently until the meat is evenly browned, crumbly, and no longer pink, about 5 to 7 minutes. Drain off any excess grease.
Step 3: Stir in the picante sauce and stewed tomatoes with their juice. Cook on medium heat, stirring occasionally, until the tomatoes are soft and fully integrated into the sauce, about 10 minutes.
Step 4: Gently fold the cooked mostaccioli into the beef and tomato mixture until well combined.
Step 5: Sprinkle the shredded Mexican-style cheese over the pasta mixture. Continue cooking and stirring until the cheese melts completely, about 5 minutes. Serve hot.

It was good but when I made it again I used half ground beef and half hot Jimmy Dean sausage, added chopped onions and sliced black olives then it was fantastic!

As written it is quick, easy, and pretty tasty. To ramp it up to 5 stars, cook some chopped onion, garlic, and green/red pepper with the beef which at a minimum should be seasoned with salt and pepper (I used taco seasoning). I also tossed in a few dark kidney beans. Like others have suggested, I put it under the broiler until lightly browned.

I cooked onions and garlic for a few minutes in olive oil, put aside. Browned my beef, drained added the onions & garlic, one additional can of diced tomatoes, cumin, salt & pepper, dried and fresh cilantro. EXCELLENT!

It’s a good quick recipe with Mexican flavor, however it needed around 1tsp fresh minced garlic sautéed with ground beef for flavor, 1/4 tsp salt and 1/4 tsp white ground pepper. I also added 1/4 cup light sour cream with beef mixture. My family likes spicy so added 2 tsp hot sauce. Placed finished mixture into glass casserole greased with olive oil and then topped with extra salsa and cheese. Bake at 350 for around 15- 20 min or until cheese form nice melted topping.

I used 93% lean ground beef, crumble fried it with onion and garlic powder, drained it, and then added a packet of low sodium taco season to prepare that part. I also used 2 cans of Rotel and a can of Petite Diced Tomatoes. After mixing, I put into an oven dish and broiled on Hi for about 6 minutes to melt and brown the cheese.

Do not put the pasta into the mixture. Spoon the mixture over the pasta in your plate. Otherwise, the pasta becomes soggy. Like others, I added some sausage, poblano peppers and onions. I garnished with chopped cilantrol and limes. Added a side salad. This recipe seems incomplete as listed. You could also serve this over Mexican rice or yellow rice Instead of the pasta.

Picante sauce usually comes in three different strengths: mild, medium, and hot. That is where most of the flavor is coming from if you don't use additives. We aren't able to tolerate a lot of spice so I always get the mild and add chopped onions and Italian seasoning to taste and use seasoned stewed tomatoes. Quick and easy to prepare for a crowd. Yum! Note that if you're making this for two, you might want to cut the pasta in half. That will still allow for four good sized servings. I keep the rest of the ingredients the same with my additives. Leftovers will be dry if you don't add enough sauce as the pasta absorbs much of the moisture when refrigerated.

Second time I used 1pd of Jimmy Dean hot sausage and added onions and garlic. I also cut the pasta to 12 oz as we like more sauce. It turned out quit good.

Consider cooking your pasta to 'al dente' as directed on the pkg of pasta, as different brands require different cooking times. 11 minutes may be WAY too long for whatever brand you're using! Add olives, peppers, or anything else to make it your own!

Very easy meal. Subbed Johnsonville mild Italian sausage for the beef, Doubled up on the canned tomatoes and used tomatoes with mild green chilis and subbed mild enchilada sauce for the picante(didn't have any). Also added some onions with the sausage as it browned. The men in the house enjoyed this!

The base recipe is good, but it definitely need more to make it amazing. I added taco seasoning, garlic, minced onion, celery salt, pepper and a can of fire roasted garlic diced tomatoes, along with some extra Mexican shredded cheese. It brought out so many extra flavors and was one of the best meals ive made.

I made it almost exactly as written. I accidentally got an 18 ounce jar of picante, so I added a jar of tomato paste. It was quick, easy and tasty! I would have liked more cheese but who wouldn’t like more cheese. lol. You could dress it up with onions, bell peppers, etc if you’re so inclined, but for a fast, tasty meal, this is great. And for the critics who say it’s too simple, lacks spices, whatever, find a recipe more suited to your tastes and stop hating on this one!

The only change I made is I added 2 cups of cheese instead of one and a half because the cheese was 2 cups.

This is another one-star wonder. All you do is open a bunch of cans and dump the ingredients together. A 10-year old could make this. The lack of herbs and spices is laughable. Do yourself a favor and skip this recipe.

This dish is a keeper, easy to make and very delicious. As some reviewers noted, it's really not Mexican, but who cares when it's delicious. The recipe as written serves eight and there's only my wife and me. Needless to say, we have leftovers even though we both had seconds. I will be making this again (and again and again) but will be reducing the recipe by half. Give it a try, you won't be disappointed.
