Instant Pot Lasagna Soup Recipe
Ingredients
- 1 (4 ounce) mild Italian sausage link, casing removed
- 1 pound ground sirloin
- 1 tablespoon olive oil
- 1 cup finely chopped onion
- 1 tablespoon garlic, minced
- 1 (32 ounce) can low-sodium chicken broth
- 24 ounces marinara sauce
- 8 lasagna noodles, broken into pieces
- teaspoon salt
- teaspoon freshly ground black pepper

Directions
- Turn on a multi-functional pressure cooker (such as Instant Pot) and select the Saut function. Add the sausage and ground beef to the pot, cooking until browned, about 5 minutes. Drain and discard any grease, then set the meat aside.
- Add olive oil to the pot and swirl to coat the bottom evenly. Add the chopped onion and cook for about 5 minutes, until soft but not browned.

Oh... My ...Gosh!! I wish there were more then 5 stars to give because I could easily rate this at 10 stars! I made it exactly as directed and it was totally awesome! The flavor was fantastic, and tasted just like a fresh lasagna, minus the cottage cheese. I'm new to cooking with the Instant Pot, and I love how even the prep is done in the pot prior to setting the pressure cooking feature. Definitely making this again but I can't think of a single thing I would want to add/change. Thank you so much for sharing this!

This soup is excellent as written. However, this is what I added to make it even more excellent! Add 1 diced red bell pepper, green pepper, and zucchini (mushroom if you prefer) right before pressure cooking, along with 1/2 cup water and 1.5 cup rotini noodles and 1tbsp Italian herb blend. When done, add 1 cup cottage cheese and 1/2 cup shredded mozzarella, stir and let melt with the lid on for a few minutes. Serve with garlic bread. DELISH!

So great. I didn’t have the sausage but used everything else and 10 lasagna noodles. I also added some oregano and Italian seasonings while sautéing the ground beef with garlic and onion. I also added a spoonful of ricotta to individual bowls when serving along with the Parmesan cheese. I will make this again. It was perfect!

Loved it! I made mine less soup, more lasagna. I used 8 Italian Sausage links, casing and grease removed. I sauteed the garlic, added Prego with mushrooms, 67 oz, one box of broken lasagna noodles, about 1/2 cup of grated parmesan cheese, garlic salt and pepper to taste. I used an open box of chicken bullion (about 1 1-1/2 cups)I cooked it for one minute, but will cooked it three minutes next time. When it was done, I added shredded mozzarella/colby mix cheese. It tasted almost like my Mom's!

Very tasty! I think we will be making it with a different type of pasta though as we found the lasagna noodles a little annoying. We will probably use Penne or Rotini next time.

Really good when made as written, but I think the tweaks I've done make it spectacular! I use a pound each of ground sirloin and Italian sausage (my guys are big-time carnivores) and use beef broth instead of chicken. I also use the oven ready noodles, they seem to cook through better. And really, is it lasagna without cheese? I recommend dumping in 2 cups of shredded mozzarella once you open up the instant pot, and ladling the soup on top of a generous spoonful of ricotta!

Very good and easy in the Instant Pot. I flipped the ratio of meats with a pound of Italian sausage and half pound of ground beef. Agree with others that adding cheese after the pressure cooking … mozzarella and ricotta … makes the flavor profile closer to classic lasagna. Also added baby spinach.

Loved it! I did add a can of sliced mushrooms because I had them and well...I love the shrooms in my lasagna. I might add some slices olives next go around because I love them too. Overall great recipe and one I will definitely make again!

Easy and fast! I enjoy the flavor and it makes for great leftovers. I went for some chunky marinara which is probably the best choice here. After cooling down it sets really thick and no longer resembles soup so if you plan on storing it make sure you have some broth/stock handy for the future to hydrate it again and make some really good leftovers!

Love this recipe. I used a pound hamburger and a whole package of sweet Italian sausage. More sausage give more flavor IMHO. Love it.

After making the 1st time it was good. So this time I added a little more using 1lb ground turkey & 1lb ground Italian sausage, 5C ck broth, 1/2C heavy cream, then added mushrooms, spinach and zucchini then added bow-tie pasta. This feed 4 adult with seconds and left overs. A+⭐

I've cooked pasta in the instant pot before and it always gets mushy or burns. This recipe has the perfect ratio of water to noodles. The timing is also spot on. A keeper for sure in our house.

Really good! I made it without Italian sausage since I didn't want to buy a whole package just for one link, and I added a couple veggies I know I like. I might substitute cauliflower for the noodles in the future, but overall, this is an EXCELLENT base that can be tweaked according to taste.
