Cornbread Cowboy Casserole Recipe

Ingredients

  • 2 pounds ground beef
  • 1 small onion, chopped (Optional)
  • 2 (7-ounce) packages sweet yellow cornbread mix (such as Martha White)
  • 1 cup milk
  • 2 large eggs
  • 1 (15-ounce) can creamed corn
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons butter, or more to taste (Optional)

Directions

Step 1: Heat a large skillet over medium-high heat. Cook and stir the ground beef in the hot skillet until browned and crumbly, about 5 to 7 minutes. Drain and discard the grease. Add the chopped onion (if using) and cook until soft, about 5 minutes more.

Step 2: Preheat the oven to 400F (200C).

Step 3: In a large bowl, combine the cornbread mix, milk, and eggs. Stir in the creamed corn until the mixture is smooth.

Step 4: Spread the cooked beef mixture evenly across the bottom of a baking dish. Sprinkle the shredded Cheddar cheese on top of the beef.

Step 5: Pour the cornbread batter over the cheese, spreading it evenly over the entire dish.

Step 6: Bake the dish in the preheated oven until the cornbread is golden brown and a toothpick inserted into the center comes out clean, about 17 to 22 minutes.

Step 7: Once out of the oven, spread butter over the top for extra flavor. Let the dish cool for about 5 minutes before cutting and serving.

This was just ok for us. I made this in a cast iron skillet, so I browned the beef and onions in the skillet, added the cheese as called for, then topped with the cornbread mixture as instructed in the recipe and put it right into the oven in the skillet. I felt the beef layer needed a bit of salt and pepper and more seasonings. Maybe some garlic, green chiles, or jalapeño peppers to make it more interesting. But if you tend to like more bland recipes, this recipe is good.

Loved this! Its cornbread that eats like a meal. Similar to a tamale pie, you can amp up the heat with jalapenos or red pepper.

Husband loved this. Made it several times. Although the only change was to add some heat as he likes things spicy!!
