Ground Beef Casserole with Rice

Cook Time: 65 minutes

Ingredients

  • 1 pound lean ground beef
  • 1 medium green bell pepper, diced
  • 1 medium tomato, chopped
  • 4 tablespoons Worcestershire sauce
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 tablespoon minced onion
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and ground black pepper to taste
  • 2 cups cooked rice
  • cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 350F (175C).
  2. In a large skillet, heat over medium-high heat. Cook and stir the ground beef in the hot skillet until its browned and crumbly, about 5 to 7 minutes.
  3. Add the diced bell pepper, chopped tomato, and Worcestershire sauce to the skillet. Continue to cook and stir for about 5 minutes, until the bell pepper softens slightly.
  4. Strain half of the liquid from the canned diced tomatoes and add it to the mixture in the skillet.
  5. Stir in the diced tomatoes, minced onion, minced garlic, oregano, basil, salt, and pepper. Simmer for about 10 minutes, allowing the liquid to reduce slightly.
  6. Add the cooked rice to the skillet and stir everything together until well combined.
  7. Transfer the beef and rice mixture to a casserole dish. Sprinkle the shredded Cheddar cheese evenly over the top.
  8. Place the casserole dish in the preheated oven and bake for about 45 minutes, or until the filling is heated through and the cheese is melted and bubbly.

Recipe Tip

You can use any shredded cheese you prefer, such as mozzarella or Monterey Jack, for a different twist on this dish.

I hope this doesn't hurt the author's feelings, but this recipe reminds me of an OLD Hamburger Helper recipe that they made back in the 70's and early 80's. We loved that and this recipe is much improved upon that one! I made this on top of the stove in a stock pot. I added 2 teaspoons beef bouillon, and next time I will add a bit more. The recipe is really wonderful and my husband and adult son loved it! My son is very hard to please, and when he heard that this reminded me of an old H.H. box recipe, well, he was reluctant to even taste it. When he did - the look of happiness came over his face and he went back for seconds too! My husband asked for this recipe to be added to our dinner roster! Haha. Try this, and try it on top of the stove it is delicious!!

I kept the 1 pound of ground beef, cooked rice, and ...well, that's about it. My recipe bears very little resemblance to the one presented here. I substituted teriyaki sauce for Worcestershire, quartered cherry tomatoes plus a small can of tomato sauce for the can of diced tomatoes, a steamer microwave bag of cheesy broccoli for the bell pepper, sprinkled some oregano, thyme, salt & pepper into the mix, stirred in the cooked rice, then scooped all that into a 9x9 casserole dish and topped it with a 4-cheese Mexican blend. Into the oven at 350 for 45 minutes and hey presto, we have a casserole! Thank you Jennifer Shymanski for giving me a road map to success and the blessing to stray far and wide along the way! :-)

Loved it! Added a teaspoon of cumin too, used 2 diced fresh tomatoes instead of 1 and a 16 ounces canned tomatoes instead of 28 oz. Delicious!

Not a bad recipe for an easy family meal, but it is improved by cooking the rice with beef broth instead of water. Also, saute a small diced onion with the ground beef instead of using the minced dried onion. A teaspoon of dried thyme ups the flavor further. These are all easy tweaks that give it a lot more flavor. Forty-five minutes is overcooking the casserole since everything in it is warm and cooked. Twenty minutes is enough to meld flavors and melt the cheese topping.

My 16-year-old son does not like tomatoes but he kept going back for seconds! I doubled the rice and meat and he ate half of the casserole!! I threw in some sliced beef sausage and extra, extra cheese because, well, it just makes almost everything taste better! I enjoyed it too! Thanks for the recipe.

I only cooked it for 10 minutes - not 45! Everything was cooked & warm already and it only takes 10 min to melt the cheese. 5 out of 5 of us liked it. Very tasty - will make again.

We eat vegan, so I substituted 1 lb of Beyond Beef and 1/2 lb Beyond Sausage. I used half a large onion (because a TBS is too little), added a jalapeno (because we like a little more spice), and threw in 1/2 cup of frozen peas. I only had one 14 oz can of diced tomatoes, so diced a fresh large tomato to compensate for the additional 14 oz. My wife and I both liked it. I was nervous about adding so much (vegan) Worcestershire sauce, but it made it much tastier. Otherwise, I followed the recipe. It is good comfort food and for a household of two will last for 2-3 more meals.

The recipe is very easy, basic ingredients. It tastes great! Only things I did differently was I covered the entire top with shredded cheese, not just 1/2 cup!! You'll want to cover it good. Then I only heated it with cheese on top for 20 minutes as everything else was already hot, you are just melting the cheese!

I made this on the stove. I didn’t put it in the oven at the end or use any shredded cheese. I did use all of the other ingredients. I liked it.

We loved it so much! We dug into it the first night and now we barely have enough for tonights leftovers! I used one fresh tomato and omitted the can tomatoes because I'm not crazy for alot of tomato taste. I did add some beef broth, a dollop of sour cream and beefy mushroom soup. Wasn't soupy at all. Looking forward to making this again! Thank you.

I substituted barbecue sauce for Worcester’s sauce and did half white American half Colby jack shredded cheese it was very easy to make after a busy day of errands I prepped and put in casserole dish and left in fridge until we got home then put in oven

I used real onion and added a can of diced chili peppers. I also used no salt added diced tomatoes. The chili peppers made up for the lower sodium. Very good and even better reheated!

Added a dash of cayenne, a dash of cumin and a dash of cinnamon. Didn't have Bell Pepper so I added 3 to 4 oz diced green chiles. Also...for the cheese I added Colby/Cheddar Combo and Mozzarella as well.

Not terrible, but far too tomato-y. In my region we are accustomed to very well seasoned meals. I increased the seasoning and still felt it did not have enough. I think a little Cajun seasoning or maybe even ancho chili powder would help. This one won't be making it to my "do again" list.

This is a great recipe! I didn't have any canned tomatoes so I diced up a couple extra fresh tomatoes. Makes a nice pan full of deliciousness. I took the suggestion to make it in a pan on top of the stove and it works perfectly and saved me from having to heat up the house by using the oven on this hot summer day. It is on my list for the future! Thank you!

Excellent and so easy! I substituted with ground turkey, poblano peppers, just one can of tomatoes and a lot more cheese than the 1/2 cup recommended in the recipe. Also added Italian seasoning and chipotle tabasco. Everyone gobbled it up!
