Retro Ground Beef Casserole with Biscuits Recipe

Ingredients

  • 1 cooking spray
  • 2 tablespoons canola oil
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 pound ground beef
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups beef broth
  • 1 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • teaspoon ground black pepper
  • For Biscuits:
  • 3 cups baking mix
  • 1 cup buttermilk

Directions

Step 1: Preheat the oven to 350F (175C). Lightly coat a glass baking dish with cooking spray.

Step 2: Heat canola oil in a saut pan over medium-high heat. Add chopped carrots, onions, and celery; saut for about 5 to 7 minutes until onions are translucent.

Step 3: While vegetables are cooking, heat a large skillet over medium-high heat. Add ground beef and cook, stirring occasionally, until the beef is browned and crumbly, about 5 to 7 minutes. Drain excess fat and discard.

Step 4: Move the cooked beef to one side of the skillet. Add butter to the empty side of the skillet and melt it over medium heat.

Step 5: Slowly whisk in the flour, a little at a time, until fully combined. Gradually whisk in the milk, making sure to whisk constantly to avoid lumps.

Step 6: Stir in the beef broth and the sauted vegetables. Season with garlic salt, onion powder, garlic powder, and black pepper. Bring to a boil, then cover and remove from heat.

Step 7: In a separate bowl, combine the baking mix and buttermilk. Stir until a soft dough forms.

Step 8: Transfer the dough to a piece of wax paper and roll it out to about -inch thickness. Use a 2 -inch round biscuit cutter, dipped in additional baking mix, to cut out biscuits.

Step 9: Pour the beef mixture into the prepared baking dish. Arrange the biscuit rounds on top of the beef mixture.

Step 10: Bake in the preheated oven for 24 to 25 minutes, or until the biscuits are golden brown and cooked through.

Tips

  • You can add mashed potatoes to the bottom of the glass baking dish before baking for added flavor.
  • To save time, use frozen vegetables instead of fresh ones.
  • Feel free to use your own biscuit recipe or Bisquick Heart Smart Pancake & Baking Mix if preferred.

I made this for my parents while visiting them and they loved it. Of course I loved it too. The directions are easy to follow. Like another suggested I just made dropped biscuits on top of the casserole as the dough was sticky. This recipe is a keeper and I look forward to making it again.

My family devoured this! Even my 10 month old ate up every bite he was given, feeding himself most of it. 😁🎉 I did make a few adjustments. I used a 1/2 cup more of both celery and carrots, plus a whole small onion which made it a bit more than a cup. I also used premade Pillsbury grands biscuits because I love them and that made this even easier. The final touch was I put finely shredded cheese on top, at my husband’s request, I put it under the biscuit though so it melted fairly quickly. I did that part after I dished it up to make sure everyone serving got enough.

This is delicious!!!!!! I was in a hurry, so I substituted frozen peas and a can of corn, drained, for the other vegetables. I also added the mashed potatoes on the bottom. To further speed things up, I used canned biscuits, cut into fourths. Next time I make it ill cut the pieces of biscuits smaller, more bite-sized. It's just scrumptious!!! Leftovers heat up fine in the microwave. Will definitely make this again!!

This recipe did remind me of cooking from the 50's and 60's, which I grew up on. The recipe worked exactly as written but I can't say the spicing was sufficient to give it any taste. When I put so much prep time into it, this was really disappointing. Perhaps adding a little real onion and garlic would make it better, as well as other spices you prefer. I also think adding a tiny amount of "heat" via hot sauce or cayenne pepper would make this excellent. Putting mashed potatoes in the bottom was a good idea, but I did have to take the biscuits off to the side because nobody wanted to combine potatoes and biscuits in their mouths! This does have promise but I would not make it as written again.

The suggestion to add mashed potatoes at the bottom would have made this a teeny bit better (and filling), but it was flavorful and we did enjoy it! Thanks for sharing this recipe. Oh, I cheated and used pre-made Pillsbury grand biscuits.

This was very good. I can vouch that's it's indeed retro as while I was fixing this, my husband walked in and said it looked like something his mom used to make. I cut this in half which made 2 servings instead of 3, and made 4 biscuits to put on top so we each got 2 biscuits and 1/4. lb. worth of the beef. The filling was basically pot pie filling and it was delicious. I let the gravy simmer while I made the biscuits. The biscuits were tender, fluffy and very filling. I seasoned the veggies and the ground beef with Nature's Seasons seasoned salt and skipped the salt and garlic salt as it's got salt, onion, and garlic powder already in it. I added in 1/2 c. of frozen peas. The ratio of butter to flour seemed off, so I increased the flour to match it. I did add a little Kitchen Bouquet browning sauce to give it a little color. This was a good comfort meal and we enjoyed it. We are definitely making this again. It's not fancy, but it's good home cooking like momma used to make.

I have been visiting this site for a very long time and don't think I ever took the time to comment on a recipe. I had to create an account just to comment on this one. This recipe is to die for. I used fresh veggies and a good southern biscuit mix. I also made homemade mashed potatoes for the bottom layer. The combination was perfection. I have been looking for an easy and yummy chicken pot pie recipe for many years. Next time I am going to use chicken and put some peas in it. The biscuit layer on top gives the feeling of a good homemade pot pie crust.

Fun and easy to make. Served it with a salad and we liked the meal. I added the potatoes on the bottom of the dish and I used frozen veggies. Will make this again.

Really loved the taste of this casserole, and makes a wonderful change from Sheppard's Pie. The only tricky part was getting the biscuit dough formed, cut and placed on top of the dish. It was VERY wet and sticky - instead of trying to make a biscuit shape, I think I will try to just drop it by spoonful on the top instead and see. Thank you tons for sharing this recipe - it is certainly on our rotation now!

I made this but modified the recipe a bit: I used ground chicken breast instead of ground beef, chicken broth instead of beef broth, and added chicken broth concentrate to the gravy mixture. I didn't use milk, just broth and it turned out fine. I also didn't use onions (food allergy in my house), and added 2 diced red potatoes and diced up 3 stalks of celery. It was really good and I'll be making it again for sure.

Absolutely delicious! I was shocked, this is not something I would typically pick out to try, but decided to try it and the whole family LOVED it!!! At the suggestion of someone else, I put the cheese under the mashed potatoes. I was going to use instant mashed potatoes, but decided to put in the effort and am glad that I did!

This was a very yummy dish. I did add chopped potatoes, cabbage, and peppers to the mix. It turned out perfect. My husband and I both gave it the top 5*. Will make again.

I used more vegetables and I used 2 smaller glass casserole dishes. since I only have 3 people to feed. My family really liked the casserole and now we have a dinner or a lunch for another day.

Easy to make! You can add extra things from the fridge to use up leftovers too. I added different spices as the first time I made it it seemed to need a bit more flavour.

Way too watery, turned into bland stew. Ruined biscuits, not enough substance and too much liquid. Avoid at all costs.
