Coconut Shrimp Curry with Mango

Ingredients

  • 1 medium sweet potato, cubed
  • 10 ounces uncooked medium shrimp, peeled and deveined
  • 3/4 cup coconut milk
  • 1 (5 ounce) plain yogurt
  • 3 tablespoons tomato paste
  • 2 1/2 tablespoons curry powder
  • 2 cloves garlic, minced
  • 1 (1 inch) piece fresh ginger, grated
  • 1/8 teaspoon cayenne pepper
  • 1 red bell pepper, chopped
  • 1 mango, cubed
  • 2 cups cauliflower florets, or more to taste
  • 2 cups cooked rice

Directions

Step 1: Preheat your oven to 375F (190C) and lightly grease a baking sheet. Spread the cubed sweet potatoes evenly on the sheet.

Step 2: Bake the sweet potatoes for about 30 minutes, or until they are tender when pierced with a fork.

Step 3: While the sweet potatoes are roasting, bring a pot of water to a boil and cook the shrimp until they turn pink, approximately 5 minutes. Drain and set aside.

Step 4: In a large skillet, combine coconut milk, yogurt, tomato paste, curry powder, garlic, ginger, and cayenne pepper. Stir over medium heat until the mixture begins to boil.

Step 5: Reduce the heat to low and stir in the red bell pepper, mango, and cauliflower. Add the roasted sweet potatoes once they are done baking.

Step 6: Allow the curry to simmer gently for at least 20 minutes, letting all the flavors meld together.

Step 7: Serve the curry hot over cooked rice, and enjoy a comforting, flavorful meal.
