Chicken Breasts with Prosciutto and Sage
This dish combines juicy chicken breasts with the savory flavors of prosciutto and sage. A simple yet elegant recipe that is quick to prepare and perfect for a weeknight dinner or special occasion.
Ingredients
- 4 skinless, boneless chicken breast halves, pounded to an even thickness
- 4 slices prosciutto
- 4 fresh sage leaves
- 1 tablespoon butter
- 3 fluid ounces dry white wine (or more as needed)
- 1 pinch salt
- Freshly ground black pepper, to taste
Directions
Step 1: Place the chicken breasts onto a sheet of parchment paper. Top each breast with one slice of prosciutto and one sage leaf.
Step 2: Roll the chicken from the short end over the prosciutto and sage, then secure the rolls with wooden skewers.
Step 3: Heat the butter in a skillet over medium-high heat. Once melted, add the rolled chicken breasts to the skillet. Cook for 2-3 minutes on each side until the chicken is well browned.
Step 4: Add the white wine, salt, and black pepper to the skillet. Continue cooking for an additional 8-10 minutes, or until the chicken is no longer pink in the center. An instant-read thermometer should show a temperature of at least 165F (74C) in the center of the chicken.
Step 5: Remove the chicken from the skillet and let it rest for 5 minutes before serving.
Editor's Note
For a more refined presentation, allow the pan juices to simmer for 3 minutes to reduce slightly while the chicken rests. Garnish the chicken with fresh herbs and serve with the reduced pan juices. If desired, serve the chicken over lightly seasoned orzo for a complete meal.
