Chef John's Sloppy Joes

Ingredients

  • 1 pounds extra lean ground beef
  • onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 cup water
  • cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard
  • 1 dash Worcestershire sauce
  • 1 teaspoons salt, or to taste
  • teaspoon ground black pepper
  • 1 pinch cayenne pepper, or to taste

Directions

Step 1: In a cold skillet, combine the ground beef and diced onion. Place the skillet over medium heat on the stove. Cook and stir the mixture until the beef is browned and crumbled.

Step 2: Add the minced garlic and diced bell pepper to the beef mixture. Stir continuously for another 2 to 3 minutes until the vegetables are soft and tender.

Step 3: Pour in 1 cup of water and mix well. Then, add ketchup, brown sugar, Dijon mustard, Worcestershire sauce, salt, and black pepper. Stir to combine.

Step 4: Add one more cup of water to the skillet and bring the mixture to a simmer. Reduce the heat to low and let it cook for 30 to 45 minutes, stirring occasionally, until the mixture thickens significantly.

Step 5: Taste and adjust the seasoning with additional salt, pepper, and cayenne pepper as needed. Once the desired thickness is achieved, remove from heat and serve hot.

Delicious as usual, thanks to Chef John! I recommend using less than 1 cup of water initially, such as 1/2 cup, and then adding another 1/2 cup later. I used 1 cup of water at first, which was actually sufficient.

I have prepared this dish multiple times and it's delicious. I was surprised that all the water was absorbed, but with a bit of patience, it worked. I recently tried using a red pepper instead of a green one, and added some BBQ sauce and diced celery for extra crunch. It turned out fantastic!
