Amazingly Tasty and Crispy Chicken Schnitzel Recipe

Original recipe (1X) yields 12 servings

  • 2 large eggs
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon crushed garlic
  • 3 cups bread crumbs, or as needed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • Vegetable oil for frying
  • 12 boneless chicken breast halves, pounded very thin
  • 1 lemon, cut into wedges

Directions

Step 1: In a bowl, whisk together eggs, honey, Dijon mustard, soy sauce, and crushed garlic until smooth and well-combined.

Step 2: In a separate shallow bowl, mix together bread crumbs, salt, and pepper, ensuring an even distribution of seasoning.

Step 3: Heat vegetable oil in a heavy skillet or deep fryer to 350F (175C). Ensure the oil depth is 1/2 to 1 inch for proper frying.

Step 4: Take each piece of chicken breast and dip it into the egg mixture, ensuring it is fully coated.

Step 5: Press the egg-coated chicken into the bread crumb mixture, pressing gently to ensure an even and generous coating.

Step 6: Working in batches, carefully place the breaded chicken into the hot oil using tongs. Cook for 3 to 4 minutes on each side, until the chicken is golden brown and cooked through, with no pink remaining in the center.

Step 7: Once cooked, remove the chicken from the oil and drain on paper towels to remove excess oil.

Step 8: Serve the crispy chicken with lemon wedges on the side for a burst of fresh flavor.

For a doubly thick crust, dip the chicken in the bread crumbs two times before frying.

Exceptional dining experience! I enhanced the dish with brown spicy mustard, 1.5 tablespoons of both regular honey and hot honey for a subtle kick. Additionally, I double-coated the meal in bread crumbs infused with Italian seasoning.

Delicious! I thoroughly enjoyed the honey mustard flavor of these cutlets. It was a delightful departure from the usual Italian seasonings (although there's nothing wrong with that...).
