Tomato Chops II Recipe
Ingredients
This recipe is designed for 4 servings. Adjust ingredient quantities as needed, but cooking times remain the same.
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1 tablespoon vegetable oil, or as needed
- 4 thick-cut pork chops
- Salt and pepper, to taste
- cup all-purpose flour, for coating
- 32 ounces canned tomato sauce
Directions
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chopped onion and green bell pepper, sauting for about 5 minutes until softened. Remove from skillet and set aside.
- Season the pork chops generously with salt and pepper. Dredge each chop in flour, shaking off any excess.
- Place the pork chops in the hot skillet and sear them until golden brown on both sides.
- Return the sauted onions and bell peppers to the skillet, placing them around and on top of the pork chops.
- Pour the tomato sauce over the pork chops. Reduce heat to low, cover the skillet, and let it simmer for 15-20 minutes. The pork chops are done when an instant-read thermometer inserted into the center reads 145F (63C).
- Remove from heat and serve warm, spooning the sauce and vegetables over the pork chops.

I opted to skip the flour and instead seasoned the chops with Adobo Goya. After browning both sides, I added my mother-in-law's canned seasoned crushed tomatoes and let everything simmer for nearly an hour, resulting in incredibly tender chops. To finish, I topped them with sautéed red and green bell peppers and onions. Overall, the dish turned out very tasty. However, the original recipe lacked flavor and required additional seasonings.

Absolutely delicious! I left out the green peppers since we're not fans, and opted for spaghetti sauce instead of plain tomato sauce. I simmered it for 45 minutes to ensure the meat was incredibly tender, and it turned out amazing! Everyone absolutely adored it - so tender that no knife was necessary.

Here is the revised review: This recipe was a nice change of pace, but it didn't blow me away. I doubt I'll be making it again. I substituted spaghetti sauce for fresh diced tomatoes with juice/sauce since I didn't have the latter on hand, and I think using the fresh tomatoes would have improved the dish. It's essentially a budget-friendly version of zigeunerschnitzel. I did appreciate the flour coating for the added texture it provided.

My boyfriend absolutely adored this recipe, it was truly fabulous. He constantly requested that I add sauce to pork chops because they tended to be dry. When I discovered this recipe, he was enamored. To elevate this delightful dish, I paired it with Uncle Ben's Spanish rice.

Delicious! These pork chops were incredibly easy to make. As someone who isn't usually a fan of pork chops, I absolutely loved them.
