Baked Cod in Foil Recipe
Ingredients
- 2 tomatoes, cubed
- 1 red bell pepper, seeded and cubed
- 1 onion, minced
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh basil
- 1 clove garlic, minced
- 4 (5 ounce) cod fillets
- 1 lemon, juiced
- Salt and ground black pepper to taste
- Aluminum foil
Directions
- Gather all ingredients to have everything ready for cooking.
- Preheat the oven to 400F (200C).
- In a bowl, combine the tomatoes, bell pepper, onion, olive oil, basil, and garlic. Mix thoroughly until everything is well combined.
- Lay out 4 sheets of aluminum foil on your work surface. Place one cod fillet in the center of each sheet.
- Evenly distribute the tomato mixture on top of each cod fillet.
- Drizzle the fillets with freshly squeezed lemon juice, then season with salt and pepper to taste.
- Place another sheet of aluminum foil on top of each fillet and fold the edges together to seal the parcels tightly.
- Repeat the process for the remaining cod fillets and tomato mixture, ensuring all parcels are sealed properly.
- Bake the parcels in the preheated oven for about 20 minutes, or until the cod flakes easily with a fork.
- Once baked, remove the parcels from the oven. Carefully unwrap each parcel and transfer the contents onto warmed plates to serve.

I usually don't prefer dishes cooked in foil packets, but I decided to give this one a shot. And I'm so glad I did - it was absolutely delicious! After reading some other reviews, I decided to sauté the onions and peppers before adding them to the foil packets. I also spiced it up with some lemon pepper seasoning instead of just salt and pepper. Thank you for sharing this recipe!

Super simple and absolutely delicious! I substituted fresh bell peppers with roasted red bell peppers and cooked it in my air fryer/toaster oven at 350 degrees for 25 minutes. This will definitely be a regular dish for me.

Delicious! I opted for baking the fish in a casserole dish with foil on top instead of wrapping it in foil. It cooked perfectly in just 30 minutes. Following a reviewer's advice, I sautéed the veggies (except the tomatoes) before topping the cod with them. Using cherry tomatoes prevented the dish from becoming too watery.

What an innovative and delightful method of preparing fish! Following the suggestions of previous reviewers, I sautéed the red peppers and onions in oil on the stove before adding the garlic just until fragrant. I also opted to cook a large fillet in a single foil packet along with all the other ingredients. The resulting dish was incredibly delicious and bursting with flavor.

In this cook time of 20 minutes, the garlic ends up raw while the fish becomes overcooked, resulting in a very unpleasant dining experience. The cod goes to waste. It would be much better to lightly sauté the garlic, onions, and peppers before combining them with the other ingredients.

This was truly one of the most delicious dishes I have ever prepared. I utilized canned chopped tomatoes along with red and yellow peppers. I paired it with a fresh green salad and some crusty bread drizzled with extra virgin olive oil and Italian spices for dipping. Absolutely scrumptious!
