Keto Smothered Chicken Thighs Recipe
Original recipe yields 4 servings.
Ingredients:
- 4 (8 ounce) skin-on, bone-in chicken thighs
- 1 teaspoon paprika
- Salt and pepper, to taste
- 4 slices bacon, cut into 1/2 inch pieces
- cup low-sodium chicken broth
- 4 ounces sliced mushrooms
- cup heavy whipping cream
- 2 green onions, white and green parts separated and sliced
Directions:
Step 1: Gather all your ingredients before you start.
Step 2: Preheat the oven to 400F (200C).
Step 3: Season the chicken thighs on all sides with paprika, salt, and pepper.
Step 4: In a cast-iron skillet or an oven-safe pan, cook the bacon over medium-high heat until it becomes crispy, about 4 to 5 minutes. Once cooked, remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess fat. Discard the remaining grease from the skillet.
Step 5: Return the skillet to medium heat. Place the chicken thighs, skin-side down, in the skillet and cook for 3 to 4 minutes until the skin is golden brown.
Step 6: Flip the chicken over and transfer the skillet to the preheated oven. Bake the chicken for about 30 minutes, or until the juices run clear and the internal temperature reaches 165F (74C). Remove the chicken from the skillet and cover with foil to keep warm.
Step 7: Remove all but 2 tablespoons of drippings from the skillet. Place the skillet back on the stove over medium-high heat. Pour in the chicken broth, scraping the bottom of the skillet to loosen the browned bits.
Step 8: Add the sliced mushrooms and cook for 3 to 4 minutes until they soften.
Step 9: Pour in the heavy whipping cream, whisking it together with the broth until it starts to simmer. Lower the heat to medium-low and season with salt and pepper to taste.
Step 10: Return the chicken thighs to the skillet, along with any juices that have accumulated on the plate. Top the chicken with the cooked bacon and sliced green onions.
Step 11: Serve the chicken immediately, spooning the creamy mushroom sauce over the top.

Great and easy recipe. I would definitely make it again. I added garlic powder in addition to the suggested seasoning to the chicken in the beginning and roasted slices of garlic before adding the broth and some baby spinach 2 minutes after adding the mushrooms to make the sauce.

I liked it as it was but the second time I floured the chicken before sautéing in order to thicken the sauce, added minced garlic, some red pepper flakes, 1/4 cup white wine and fresh tarragon. Served it at a dinner so also doubled ingredients. There was nothing left. This recipe has all kinds of possibilities.

Ok. This is a seriously good and easy chicken recipe! Made it for a Keto family whonjustvhad a baby and figured. Looks good enough for us! I added baby spinach, suggested by another cook and added some garlic powder to the chicken broth as it was cooking. We are not Keto so in ours, I added a tablespoon of flour into the whipping cream and mixed, before I put it into the broth/mushroom/spinach mixture because some complained that the sauce was not thick enough. I also doubled the sauce recipe and it was oerfect!

I used boneless/skinless chicken breasts. Because I don't own an oven-ready skillet, I modified recipe instructions to prepare this dish via stovetop method---and it still turned out fantastic. I browned my chicken using the bacon fat grease before discarding all but a tablespoon of it, which lent a smoky flavor to the sauce, complimenting the mushrooms and fresh green onions. Next time, I will be looking at thickening this marvelous sauce . My way of making this dish may have removed the Keto diet benefits--but it sure was a tasty dish my family loved.

This was delicious. I sautéed the mushrooms along with fresh spinach before adding chicken broth and used 1/2 n 1/2 instead of heavy cream. Will definitely make again !

This was very good. I did make a few changes. I used boneless skinless thighs (worked great). I added a medium onion to the mushrooms when sautéing and increased mushroom quantity to 12 oz (increased broth a bit). Then I used a good quality Alfredo sauce instead of cream. Didn’t have any green onion to top but that’s not a necessity.

This recipe was delicious! I added a serrano pepper and some minced garlic before I put in the chicken broth. Just long enough until they were fragrant. I also used boneless skinless chicken thighs. I just cooked them in the skillet without putting in the oven. Definitely making this again.

I added a bunch of vegetables to it: garlic, sweet onion, celery, and fresh minced Italian parsley (a lot of it, at least 2 cups). Since the thighs I bought on sale were boneless/skinless, I just chopped them up into bite-sized pieces and cooked everything together. I'll crockpot it next time, but not use cream till the end. It has good flavors. It's easy to play around with the recipe and still get a good dinner.

Only adjustment I made was replacing salt and pepper with Gaspar’s seasoning. I also did not re-season during the Mushroom stage. Otherwise, served with mashed sweet potato and steamed spinach. Sweet potatoes were rinsed and added Himalayan salt and pepper then foiled (loosely...got to leave room to breathe) I placed the in the back of my grill where I fired up some coal and let them cook that way for about an hour.

Loved the ease! Great basic recipe! Made only three changes, per our allergies, tastes, and what I had on hand. Used boneless , skinless chicken thighs and baked them for only 15 minutes. Did not use mushrooms in the sauce, as my husband is allergic to them. Instead, after making the sauce (added sherry! Yum!), I threw in some asparagus pieces , covered the pot, and simmered for 3 minutes. Perfectly crisp & hot asparagus, and a delightful vegetable addition for Spring! Thanks so much for this KETO(!!!) delight!!!

Delicious! My chicken thighs were boneless and appeared to cook through while browsing them in the bacon grease, so instead of baking them and then adding the sauce afterwards, I set them aside while I made the sauce; then put the sauce on and baked the whole thing. Delicious! Will definitely make again. Served with spaghetti squash and a salad, excellent dinner!

Great recipe but I would like to add that this is a keto recipe, adding flour as others suggested, no longer makes it keto. But if you are not keto, add away!!

Simple recipe to make. I used better than bouillon (Chicken) instead of the low sodium stock, and made it a bit stronger than normal - Great flavor! I do not eat pork, so I substituted beef bacon. I also added minced garlic per the other recommendations.

I threw some asparagus and garlic powder in with the mushrooms and added half a block of cream cheese to make a thicker sauce.
