Quick and Easy Sicilian Meatloaf Recipe

Original recipe (1X) yields 6 servings:

  • 1 pounds lean ground beef
  • cup dry bread crumbs
  • 1 (1 ounce) package dry onion soup mix
  • cup barbecue sauce
  • 1 clove garlic, minced
  • 1 egg
  • 1 tablespoon all-purpose flour
  • Ground black pepper to taste
  • 8 thin slices deli ham, or as needed
  • 1 cup shredded Swiss cheese, or as needed
  • cup ketchup
  • 1 teaspoon mustard
  • 1 tablespoon brown sugar
  • 1 dash soy sauce

Directions

  1. Preheat the oven to 350F (175C). Place a 24-inch sheet of parchment paper onto a work surface.
  2. In a bowl, combine the ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper. Mix until well combined.
  3. Transfer the meat mixture onto the parchment paper. Pat it down into a 10x16-inch rectangle shape.
  4. Layer the ham slices on the meat, leaving a 1-inch border around all sides of the rectangle. Sprinkle shredded Swiss cheese over the ham.
  5. Carefully lift up one short edge of the meat rectangle using the parchment paper. Gently roll the meat up and over the filling, sealing the edges and ends tightly.
  6. Transfer the meatloaf to a 9x13-inch baking dish and discard the parchment paper.
  7. Bake in the preheated oven for 45 minutes.
  8. Meanwhile, prepare the glaze by mixing together ketchup, mustard, brown sugar, and soy sauce in a small bowl until the sugar dissolves.
  9. After 45 minutes, remove the meatloaf from the oven. Spread the prepared ketchup mixture over the top of the meatloaf.
  10. Return the meatloaf to the oven and bake for an additional 15 minutes, or until the beef is no longer pink in the center. The internal temperature should reach 160F (70C) when measured with an instant-read thermometer.
