Pork Burger Sliders with Peach-Tarragon Aioli Recipe

Peach Aioli Sliders
Original recipe yields 4 servings.
Ingredients
- Aioli:
- 4 tablespoons chopped peaches
- 3 tablespoons mayonnaise
- 2 tablespoons minced fresh tarragon
- 1 teaspoon chile-garlic sauce (such as Sriracha)
- Sliders:
- 8 ounces ground pork
- cup applesauce
- 3 tablespoons plain panko bread crumbs
- teaspoon salt
- teaspoon garlic powder
- teaspoon onion powder
- teaspoon ground black pepper
- 4 slider-size burger buns
Directions
- In a food processor, combine chopped peaches, mayonnaise, tarragon, and chile-garlic sauce. Process for about 1 minute until smooth. Set the aioli aside in the refrigerator until you're ready to use it.
- Preheat your outdoor grill to medium-high heat and lightly oil the grill grate.
- In a bowl, mix ground pork, applesauce, panko bread crumbs, chile-garlic sauce, salt, garlic powder, onion powder, and pepper until well combined.
- Divide the pork mixture into 4 equal portions and shape each portion into a burger patty.
- Place the burger patties on the preheated grill. Cook for about 3 minutes per side, or until an instant-read thermometer inserted into the center of the burgers reads at least 160F (70C).
- While the burgers are cooking, spread the peach aioli onto the slider buns.
- Once the burgers are done, place each one on a bun with the aioli spread. Serve and enjoy!
Cook's Note
The burgers also cook well on a stovetop grill pan. If you have time, prepare the aioli earlier in the day so the flavors can meld together.
