Roasted Pork Tenderloin with Fresh Plum Sauce Recipe
Ingredients
- 1 tablespoon vegetable oil
- 1 pork tenderloin
- Salt and ground black pepper to taste
- 1 red onion, sliced
- 2 shallots, sliced
- 3 fresh thyme sprigs, or more to taste
- 2 firm plums, pitted and each cut into 4 wedges
- 1 cup water
- 1 tablespoon balsamic vinegar
- 1 teaspoon cold butter
Directions
Step 1: Preheat the oven to 400F (200C).
Step 2: Heat the oil in a large, oven-proof skillet over medium-high heat.
Step 3: Generously season the pork tenderloin with salt and black pepper.
Step 4: Brown the pork tenderloin in the hot oil, turning it to ensure all sides are browned, about 2-4 minutes per side.
Step 5: Once browned, transfer the tenderloin to a plate and set it aside.
Step 6: In the same skillet, saut the sliced onion with a pinch of salt until the onion begins to soften, about 3-5 minutes.
Step 7: Add the shallots and reduce the heat to medium. Continue to cook and stir until both the onion and shallots are golden brown and caramelized, about 10 minutes.
Step 8: Stir the thyme into the onion mixture, then place the tenderloin on top of the onions and shallots.
Step 9: Arrange the plums, skin-side down, around the pork tenderloin in the skillet.
Step 10: Transfer the skillet to the preheated oven and cook for about 20 minutes, or until the pork is slightly pink in the center. Use an instant-read thermometer to ensure the pork reaches at least 145F (63C).
Step 11: Once the pork is cooked, transfer the tenderloin and plums to a clean plate and cover them with aluminum foil to keep warm.
Step 12: Place the skillet back on medium-high heat. Add the water and balsamic vinegar, bringing the mixture to a boil while scraping up the browned bits from the bottom of the pan with a wooden spoon.
Step 13: Let the liquid cook for about 5-10 minutes, stirring occasionally, until it reduces by half.
Step 14: Remove from heat and whisk in the cold butter until it melts and the sauce becomes shiny.
Step 15: Pour the sauce over the sliced pork and plums, then serve immediately.

I had to make a small change to the recipe because I didn't have enough shallots and balsamic vinegar in my kitchen. I ended up using garlic and white vinegar instead.
