Impossible Stuffed Peppers Recipe
Ingredients
- 2 cups water
- 1 cup uncooked white rice
- 3 tablespoons olive oil, divided
- 1 medium yellow onion, chopped, divided
- 1 medium poblano pepper, chopped, divided
- 4 cloves garlic, chopped, divided
- 1 (15 ounce) can black beans, rinsed
- 2 medium tomatoes, cut into chunks, divided
- 1 teaspoon ground cumin
- 1 pinch ground chipotle seasoning
- Salt to taste
- 1 (12 ounce) package Impossible Burger
- 2 teaspoons adobo all-purpose seasoning
- 2 cups fresh spinach
- 6 large bell peppers
Directions
Step 1: Combine water and rice in a saucepan. Bring to a boil. Reduce heat to medium-low, cover, and simmer for 20 to 25 minutes, or until the rice is tender and all the water has been absorbed.
Step 2: While the rice is cooking, heat 2 tablespoons of olive oil in a medium pot. Add half of the chopped onion, poblano pepper, and garlic. Saut for about 3 minutes until softened.
Step 3: Stir in the black beans and half of the chopped tomatoes. Cover and let simmer for 5 minutes.
Step 4: Add the cooked rice to the black bean mixture. Season with cumin, chipotle, and salt to taste. Stir well and set aside.
Step 5: Preheat the oven to 350F (175C).
Step 6: Heat the remaining 1 tablespoon of olive oil in a skillet. Add the remaining onion, poblano pepper, and garlic. Saut for another 3 minutes until softened.
Step 7: Add the Impossible Burger to the skillet, breaking it up as it cooks. Season with adobo seasoning and salt. Cook for 5 to 6 minutes, stirring frequently, until the burger is no longer pink.
Step 8: Add the black bean and rice mixture, fresh spinach, and the remaining tomatoes to the skillet. Mix well and let it simmer for another 3 minutes.
Step 9: Cut the tops off the bell peppers and remove the cores. Stuff each pepper with the filling mixture.
Step 10: Arrange the stuffed peppers in a baking dish. Bake in the preheated oven for 15 to 20 minutes, or until the peppers are tender.
Tips
- If desired, substitute 1 1/2 cans of fire-roasted tomatoes for the fresh tomatoes: add one can to the rice mixture and half a can to the burger mixture.

My spouse and I loved trying out this recipe. I opted for canned tomatoes over fresh ones, and it turned out perfectly fine, not dry at all. Adding some shredded cheese to the pepper stuffing was a great touch. The Impossible Burger provided a satisfying flavor and texture. Freezing the spinach briefly in a ziplock bag and crumbling it made the prep a breeze. I'll absolutely be making this recipe again.

These turned out amazing! They weren't as greasy as beef ones. I opted for using canned diced tomatoes and found that the cooking time for the peppers to become tender was a bit longer in my oven. I cooked the rice in an Instant Pot. Since my peppers were small, I ended up enjoying the leftover filling on its own. Delicious!

This dish was absolutely delightful. I didn't make any alterations, simply included some cheese in a few. I adored the burst of flavors, the varied textures, and vibrant colors. A superb recipe indeed. I slightly tweaked it by preparing the "meat" mixture first and then incorporating the rice to streamline the process. During baking, I opted to cover it. With an abundance of the mixture on hand, I arranged the excess around the stuffed peppers in the pot.

I followed the recipe exactly as written and it turned out perfectly. The combination of flavors is fantastic. The addition of fresh spinach not only enhanced the taste but also added great texture and color, which was a brilliant touch. I appreciated that the peppers retained their crunchiness without being overcooked, just the way we prefer them. This was my second time using Impossible (R) and it was just as amazing as the first time. This recipe is outstanding and I will definitely be making it again.
