Creamy Herbed Pork Chops Recipe

Creamy Herbed Pork Chops Recipe

Cook Time: 25 minutes

Servings: 4

Ingredients

  • 4 thick-cut boneless pork chops
  • 1 teaspoon Montreal steak seasoning (or to taste)
  • 2 tablespoons all-purpose flour (or as needed)
  • 1 tablespoon dried basil
  • 1 teaspoon instant beef bouillon granules
  • 5 tablespoons butter, divided (or as needed)
  • 1 teaspoon freshly ground black pepper
  • 2 cups milk

Directions

Step 1: Season the pork chops generously on all sides with the Montreal steak seasoning.

Step 2: In a small bowl, combine the flour, dried basil, and beef bouillon granules. Stir well to mix.

Step 3: In a large skillet, melt 2 tablespoons of butter over medium heat. Once melted, add the seasoned pork chops.

Step 4: Cook the pork chops for 7 to 10 minutes on each side, until they are nicely browned and just slightly pink in the center. Use an instant-read thermometer to ensure the internal temperature reaches at least 145F (63C). Transfer the chops to a plate and set aside.

Step 5: Add the remaining butter to the skillet, ensuring that about 3 tablespoons of pan drippings remain.

Step 6: Stir the freshly ground black pepper into the pan drippings and cook for 1 minute, allowing the flavors to infuse.

Step 7: Add the flour mixture from Step 2 to the skillet. Stir constantly for about 2 minutes, or until the mixture turns a golden brown color.

Step 8: Gradually whisk in the milk and bring the sauce to a simmer over medium heat. Stir continuously for 4 to 6 minutes, until the sauce thickens and becomes bubbly.

Step 9: Serve the creamy sauce hot over the cooked pork chops, and enjoy!

Origin Story

The creamy herbed pork chops recipe is a classic dish that blends savory flavors with comforting textures. Though its exact origins are difficult to trace, dishes similar to creamy pork chops have appeared in various cultures throughout history, often incorporating herbs, butter, and cream as staples in cooking. The popularity of pork chops as a protein, coupled with the rich flavor of creamy sauces, has made this dish a favorite in many households. It is particularly beloved in American cuisine, where it often appears as a hearty, weeknight dinner option.

Regional Variations

While the basic concept of creamy pork chops remains consistent, regional variations do exist. In the Southern United States, for instance, pork chops are often served with a spiced gravy, featuring more robust flavors such as cayenne pepper and paprika. In contrast, the version with fresh herbs like basil is common in Northern European cuisine, especially in areas where herbs and dairy products are prevalent. Additionally, in some regions, pork chops may be baked in a casserole, where they are simmered in a creamy sauce for a longer period, ensuring extra tenderness.

What Sets It Apart

Creamy herbed pork chops stand out from other pork chop dishes because of the rich, creamy sauce that accompanies them. Unlike many traditional pork chop recipes that rely on simple seasonings or grilling, this recipe takes advantage of the creamy texture and herb-infused flavor, which complements the mild taste of pork. The combination of Montreal steak seasoning, fresh herbs, and creamy milk-based gravy creates a well-balanced, flavorful profile that is both savory and slightly herbal, distinguishing it from other simpler or more heavily spiced pork chop dishes.

Where Its Served

This dish is typically served in casual dining settings or as a family dinner option. It is often accompanied by mashed potatoes, roasted vegetables, or rice, making it a versatile meal for a variety of occasions. The creamy sauce makes it particularly popular for special dinners or occasions where comfort food is desired, such as holidays or family gatherings. Although it is not a traditional restaurant dish, many home cooks find it to be an easy yet elegant option for both weeknight meals and weekend get-togethers.

This was superb! I pan fried thick center loin pork chops in the butter. They came out to perfection, and the pan drippings were perfect for the gravy. Some of us have to fiddle with these recipes, and it was no exception in this case. I added Herbs de Provence to the gravy that took it over the top! I would also suggest that the beef bouillon is not needed as I think it would overpower the pork flavor. The chops were moist and tender at 9 minutes per side on a medium gas heat. All in all, simple and delicious!

I just browned the pork chops and made the sauce as directed then put everything in a casserole dish. Baked, covered, at 350F for 1 hour. Very tender and tasted great!

This simple recipe is SO good! I served mine with white rice, baked beans and steamed cabbage. I made very few modifications… namely, i added fresh chopped green onion (mostly using the white part of the stalk) and rosemary to the flour mixture; I also used less beef bouillon, and added garlic salt and a pinch of celery salt. I also added about a tablespoon of chicken broth at some point. i had some overly burned bits after removing the pork chops from the pan, so i used a metal tablespoon to remove those before continuing. For the gravy, i opted to move the butter/pork “drippings” to a small saucepan before adding the flour mixture there instead of the original pan (simply so would be easier to scoop out with small ladle). Thank you for this excellent recipe!

Base recipe was good, but as others have noted, 1 TBSP of basil seemed a bit too much. Instead, this was replaced with 1 tsp basil and 1 tsp thyme. To reduce the amount of butter, pork chops were fried in olive oil and then placed in an oven at 275º for about ten minutes while making the gravy. 2 TBSP of butter was melted into the drippings to make the roux. Gravy was excellent!

This made a delicious gravy even though I don't use cow's milk. I only had regular soy milk (not unsweetened), so I used some of it and some vegetable broth. I cut down on the pepper on someone else's advice, and am glad I did. Everyone loved it. A cooking note: I used a large stainless skillet, and for some reason the butter and drippings got too dark too quickly. I thought the gravy would taste burned, but with a little extra butter and a lot of whisking it was saved....next time I might use a little lower heat. Thanks for an easy and yummy recipe!

Didn't have any instant beef bouillon granules, so, we replaced the Bouillon with a teaspoon of Italian seasoning (may want to cut basil to 1/2 tablespoon or less) then followed MISTICAT57 suggestion to brown the pork chops and make the sauce as directed then put everything in a casserole dish. Baked, covered, at 350F for 1 hour. Great tasting Recipe.

I love this recipe - 5 stars because of the little tweaks I made to a great recipe = only a small amount of Montreal steak spice is needed - about half that is stated. Also just a tsp of dried basil - a whole tbsp if fresh but you don't need a whole tbsp of dried other than that, all the same! I use better than bouillon beef for the instant beef granules -also a bit more flour for thickening - maybe because I use 1 % milk? anyway- this is a delicious recipe

This was awesome!!! We mixed the flour/spices together to have ready to make the gravy. We ended up grilling on our Traeger for perfect chops and then I browned the butter before adding the milk/flour/seasoning. Added the chops back when the gravy was done and served over egg noodles. Super quick and easy and would absolutely make again. Thanks Cassie!!

I made this recipe for dinner tonight, and it was delicious - everyone loved it! I made very minor modifications, based on what I read from other reviews. I cut back on how much Montreal seasoning I used (just sprinkled some on both sides) and cut back on the basil slightly. The only thing I would say is you need to cook the sauce for 10-12 minutes. We could still taste the flour at 6 minutes. I will definitely make again, thank you!

Amazing! Loved it so much I actually made it with chicken and switched the Montreal steak to Montreal chicken seasoning and the beef bouillon to chicken bouillon. That also turned out amazing!

This turned out really good following the recipe other than using 1/2 tsp basil and 1/2 tsp Herbs de Provence. I also cut back on the pepper a bit and I am glad I did b/c it is was plenty peppery doing that. Seasoning one side of the pork chop w/ lower salt Montreal seasoning was enough for us as well. I made roasted red skin potatoes for the side and we ate it with the gravy but mashed would be even better. I am glad to have another pork chop recipe in my rotation! Recently made this again using pork tenderloin and the family liked it even better. Cut it into medallions and cooked it on Med in the pan then followed all the other steps using Oatmilk this time for the gravy and it turned out amazing.

Maybe I used too much of the Montreal Steak seasoning, but it was way too salty & peppery.

I wish I would’ve seen the review where they simplified this recipe by baking everything in a casserole dish before I went through all these steps. It was good, but took too long for me. If I do make this again, I’m definitely gonna try that.

Made with 2 huge chops, browned in skillet and finished in the oven while making the gravy. Halved the gravy ingredients…was plenty.

Pork chops were tough. Probably better to brown them and then bake.
