Ingredients

Original recipe (1X) yields 6 servings
- 2 pounds lean ground beef
- 1 (10.5 ounce) can condensed vegetable soup
- cup chopped onion
- 1 cup dry bread crumbs
- 2 eggs
- 1 teaspoon salt
- 1 pinch ground black pepper
- cup ketchup (Optional)
Directions
- Preheat your oven to 350F (175C). Lightly grease a 12-cup muffin pan.
- In a large mixing bowl, combine ground beef, vegetable soup, chopped onion, bread crumbs, eggs, salt, and pepper. Mix thoroughly until well combined.
- Scoop the mixture evenly into the prepared muffin cups, making sure each cup is filled to the same level.
- Bake the muffin cups in the preheated oven for 1 hour, or until the internal temperature of the meat reaches at least 160F (70C).
- If you prefer, after 50 minutes of baking, remove the muffins from the oven and drizzle ketchup on top of each one. Return them to the oven for an additional 10 minutes to allow the ketchup to set.
- Once done, remove the muffins from the oven and let them cool slightly before serving.

I made this recipe for a group and wanted the muffin tins to be full. I ended up using 2-1/3 lbs. of 90% lean ground beef to fill all 12 cups completely. I used foil liners (some sprayed, some not) in a coated pan for this trial, and had no issues removing the muffins from the liners or cleaning the tin. I noticed that the liners that weren't sprayed had less grease. Instead of adding vegetable soup, I added some ketchup to the mix and cooked it for 40 minutes. Then, I spread more ketchup on top and cooked for an additional 5 minutes. For my next attempt, I plan to add Worcestershire sauce and garlic powder to the meat mixture and reduce the cooking time by 5-10 minutes. Although this batch wasn't dry, it could have been more moist. I really like the idea of individual muffin-sized portions for our group potluck and I hope it will be well-received.
