Sheet Pan Smoked Sausage, Apple, and Root Veggie Dinner Recipe
Ingredients
- 8 ounces baby carrots
- 8 ounces Brussels sprouts, halved lengthwise
- 1 small red onion, peeled and cut into 8 wedges
- 3 tablespoons olive oil
- 2 teaspoons chopped fresh rosemary
- 1 teaspoon kosher salt
- teaspoon black pepper
- 1 (12 ounce) package Hillshire Farm Rope Smoked Sausage, cut into " bias-cut slices
- 1 medium Honeycrisp apple, cut into 12 wedges
- 1 lemon, halved
- 2 tablespoons chopped parsley
Directions
Step 1: Preheat your oven to 450F (232C) and place a large baking pan inside to heat up.
Step 2: In a large bowl, toss together the carrots, Brussels sprouts, red onion, olive oil, rosemary, salt, and pepper until well combined.
Step 3: Once the oven is preheated, arrange the vegetable mixture and sausage in a single layer on the hot baking pan.
Step 4: Bake for about 20 minutes, or until the vegetables are just tender.
Step 5: Remove the pan from the oven. Turn on the broiler to high.
Step 6: Add the apple wedges to the pan and return it to the oven. Broil for 5-6 minutes, or until the apples are tender and the vegetables are slightly caramelized.
Step 7: Remove the pan from the oven and squeeze the juice of the halved lemon over the vegetable mixture. Sprinkle with fresh parsley before serving.

This is a great recipe. I doctored it up a little bit, not much, but it was truly amazing. I used green chile olive oil, which gave it a bit of a kick, and used 12 oz carrots and 12 oz Brussels sprouts. I also spread whole rosemary stalks around the pan instead of chopping it. And instead of parsley I sprinkled chopped fresh chives and drizzled half of a lemon over everything. 450 degrees was a little high and a couple of the onions burned, but overall it was delish! I'll use 425 next time, I think. The sweetness of the apple really complemented the sausage and the veggies. My man loved it! It's definitely a keeper. I think the green chile oil made a big difference, and all the flavors really blended well. It's a nice recipe to experiment with as well, maybe adding potatoes and other root vegetables, and different oils and seasonings.

Made it tonight and both my boyfriend and I loved it. I added fingerling potato’s and parsnips and cooked those at 425 for about 15 mins ahead of everything else to make sure they were done. I also doubled the rosemary, added 2 tsp of garlic salt, 2 tsp of herbs de providence and omitted the regular salt. Definitely a recipe to keep.

Excellent recipe, the only changes I made was to add sweet potato and instead of lemon juice, I drizzled honey over the top of the caramelized veggies. I will absolutely make this again. Thanks for the recipe!

Just made this and it was a hit! Sooo easy! Added fresh green beans to the carrots and Brussel Sprouts. And doubled the sausage. Excellent! Others said the Broil at the end with the apple slices caused some burning, but we did not have that problem; however our oven has a LOW or HIGH Broil option and we used the LOW broil setting.

I made this exactly as directed, using Hillshire Farm Smoked Turkey Sausage. My husband and I really enjoyed this. In hindsight, the only thing I would do differently is to add the apples to the sheet pan during the last 10 minutes of the 20 minute bake time, rather than switching to broil. My veggies were already pretty carmelized after baking for 20 minutes. One other thing I'd do is to line my sheet pan with either parchment or non-stick aluminum foil for easy cleanup and to prevent sticking. Using the turkey sausage, 1 serving of this comes out to 6 smart points for those following the WW green plan. Will make again!

I have done this 2x . The changes to make this great were 425 for 45 minutes adding the sausage on the last 20 I also removed rosemary and added 1 tablespoon maple syrup to all the veggie and the apple at the beginning no need to broil .

Loved this. Based on blandness others commented on made a few adjustments. To oil rub mixture added 1 t. dried parsley and 1 t. garlic powder and after coating veggies in bowl sealed them in a quart baggie and put in fridge for a few hours turning a couple times. Did everything else exactly as recipe called for and even my picky husband loved it. Great recipe and very simple!

This was delicious and well worth making. I added 1 sweet potatoe, a small bulb of fennel, zucchini and tossed at the end with a balsamic reduction. Next time I will add parsnips as well. I made a side of rice for the kids too.

I used fresh brocolli, Eckrich smoked pork/turkey/beef sausage, 1 sliced red pepper, 1 large apple, 1 green zucchini, red onion. Mixed all in a large bowl with seasonings in recipe and 5 or 6 tbsp. olive oil plus 2 tsp. garlic powder. Preheated sheet pan and spread everything out on pan then roasted for 25 minutes at 425 degrees. I did not broil! Turned out perfect and absolutely delicious! Like another reviewer said, this recipe is so versatile and you can use just about any veggies.

This was easy and delicious. I did add some red and orange peppers, parsnips, turnips and red potatoes. I cooked the added parsnips, turnips and potatoes for 20 minutes before I added to remaining ingredients. Will make this more often.

Surprised my wife with this dish for dinner tonight. Added a few of those tiny potatoes halved (microwaved them for a few minutes first) and used chicken habanero sausage since she is not fond of smoked sausage or Italian sausage. Other than that, followed recipe as written. We really loved it! i'll be making this again for sure. So easy, but great flavor. Enough left over to take to lunch tomorrow. Try it!

Loved it. Added red pepper flakes. It charred a little too much so I'll turn the temp down, as others noted, next time. Because I'm allergic to red meat I substituted smoked chicken sausage, which worked well.

I made it as is, exactly except turned the oven temp to 435 instead of 450 since many reviews said it needed a lower temp. It was a huge hit in my house. I made some cornbread to go with. Great smells, tastes, and feeling full!

I made this with sweet onions, local smoked sausage, mixed baby potatoes, and parsnips. Oh buddy. I doubled the recipe and we ate on it for a week! Soooooo good! I'm making it again this week! It was a great way to get in all those veggies for someone trying to eat healthier, and the lemon and rosemary added SO much flavor without any fat. Delicioso!

My family found the lemon juice and apple slices a bit odd in the recipe. Also, you cannot substitute dried herbs for the fresh ones like most recipes. There's not enough cooking time for the rosemary to no longer be tiny shards. Everything else was really good together and good tasting; I would just skip the apples and lemons and only make this if you happen to have fresh herbs.
