  • 10 ounces boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • cup red wine
  • 1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1 cup Swanson Chicken Broth
  • 4 ounces uncooked penne pasta
  • cup water
  • 4 cups baby spinach

  8. Return the browned chicken to the skillet. Continue cooking for 2 minutes, or until the chicken is fully cooked through.
  9. Stir in the baby spinach and cook for 1 minute or until the spinach wilts.

New to cooking so I whish they said what to season the chicken with so I just guessed ..plus I Had to add more broth to help the pasta cook but it was really good. When the wife and kids get home that will be the real test haha

AHHH-SOME! Used trimmed, cubed chicken thighs vs breasts. Seasoned only with S&P. In step 2, once the onions were soft, added 2 cloves of minced garlic and the red wine BUT! Cooked until the wine was nearly cooked off - absorbing into the onions/garlic. Since I had fresh tomatoes from my garden - used nearly 2c in lieu of canned AND 2tsp each dried oregano and basil upon adding them to the pot. I used 2c chicken broth (IPO the water) and 1.5 c dried penne. I had put out Parmesan cheese on the table in case this needed a “boost” of flavor but, no one added it!! Absolutely delicious!! Thanks Staff Author - whomever you are! This is a great recipe!

This recipe is a win. Easy enough for a weeknight dinner. Things I added: 1 orange bell pepper, 5 cloves minced garlic, I seasoned the chicken with salt pepper, and Italian seasoning. I also added additional basil, oregano and red pepper flakes. This was plenty flavorful!

I doubled the recipe so there would be leftovers... It was a very good dish and so easy! I was worried that the spinach wouldn't all stir in but it absolutely did! Definitely a keeper. (Wasn't sure what wine to use so I ended up just using a decent bottle of a red blend. Nice flavor profile!) Oh I also seasoned the chicken heavily with a Cajun seasoning... Nice!!!

I doubled the recipe for More Chicken and a box of Pasta. I also used the gluten Free Pasta (Barilla), omitted the onion (because I am allergic). I used Vegetable Broth instead of chicken broth because that is what I had, and it was excellent. Noone missed the onion, and nobody realized it was gluten free.

This was a hit. The flavor was VERY good for such little ingredients. I seasoned the chicken with adobo and instead of red wine I used sherry. I also subbed dried egg noodle spaetzle for the penne. My kiddo was looking for seconds. I did add generous amounts of fresh Parmesan cheese on top. 5 star, fast, one pot, Monday night dinner.

This was very good. I seasoned the chicken with salt, pepper and Italian seasoning. I used two cans of tomatoes but no water. This is a keeper. It has a mild but delicious flavor. The texture is good as well. I’m not much for taking pics because once it’s cooked, I wanna eat. Everyone enjoy this.

My family loved this. I seasoned the raw chicken with Tony Catcheries and poultry seasoning. I followed the rest of the recipe, but added salt, oregano, garlic, basil and red pepper flakes. I will definately be making this again!

I made this the other night and it was very good. I used basil, oregano and fresh garlic as I didn't have the Italian seasoned tomatoes, otherwise followed the recipe exactly. I did find the sauce too soupy and thin so I added 1/4 cup tomato paste and that did the trick. The dish was tasty and hubby impressed so it was a win-win! I served with parmesan and chili pepper (we like spice) and a side of garlic bread.

There’really nothing significant that I would vary. I do tend to put crushed garlic and cracked pepper in just about everything and frequently red pepper flakes . I like that you do not suggest adding salt. Almost everyone does most of the time. And then your family and guests add more salt at the table anyway.
