Original recipe (1X) yields 2 servings

  • 12 ounces whole wheat pasta (e.g. farfalle pasta)
  • 2 cooked chicken breasts, cut into bite-sized pieces
  • 1 (6-ounce) jar sun-dried tomatoes, drained and chopped
  • 1/3 cup chopped or julienned fresh basil (loosely-packed)
  • Optional toppings: crushed red pepper flakes, toasted pine nuts

Sauce:

  • 1 tablespoon butter or olive oil
  • 5 cloves garlic, minced
  • 2 cups Almond Breeze Unsweetened Original Almondmilk or Almond Breeze Extra Creamy Almondmilk
  • 3 tablespoons all-purpose flour
  • 1/2 cup freshly-grated Parmesan cheese, plus more for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

Step 1: Bring a large pot of generously salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, following the package instructions (approximately 9 to 12 minutes). Drain and set aside.

Step 2: While the pasta is cooking, heat olive oil (or butter) in a large saut pan over medium-high heat. Add minced garlic and saut, stirring occasionally, for 1 to 2 minutes until fragrant.

Step 3: Stir in flour and continue sauting for another minute, stirring occasionally to ensure the flour is well mixed.

Step 4: Slowly pour in Almond Breeze Unsweetened Original Almondmilk (or Extra Creamy Almondmilk), whisking to combine until smooth. Continue to cook, stirring frequently, until the mixture comes to a simmer and begins to thicken.

Step 5: Stir in Parmesan cheese, salt, and pepper. Cook and stir until the cheese is completely melted and the sauce is smooth. Keep the sauce on low heat until the pasta is ready.

Step 6: Once the pasta is cooked, toss it together with the chopped chicken breasts, sun-dried tomatoes, and half of the fresh basil until everything is evenly combined.

Step 7: Serve immediately, garnished with the remaining fresh basil. Optionally, top with additional Parmesan cheese, toasted pine nuts, and crushed red pepper flakes, if desired.

Origin and History: Creamy Chicken and Sundried Tomato Pasta combines two beloved culinary traditions: Italian pasta and Mediterranean flavors. While pasta is a staple in Italian cooking, the addition of sundried tomatoes adds a touch of Mediterranean flair. Sundried tomatoes themselves have ancient roots, dating back to Roman times when they were used to preserve the vibrant flavors of tomatoes for year-round use. The use of sundried tomatoes in pasta dishes became popular in the modern Mediterranean cuisine, particularly in Italy, where sun-dried tomatoes are a cherished ingredient for their concentrated flavor and chewy texture. This recipe reflects the rich history of Italian comfort food while incorporating contemporary twists, such as almond milk for a creamy yet dairy-free alternative.

I would never have thought of making a savory sauce using almond milk. This was tasty but I felt it was missing something. Maybe some different seasonings other than salt and pepper? I also thought there was not enough sauce for the amount of pasta. If I make it again I will double the sauce and add Italian seasoning and maybe some dried parsley. Thanks for sharing the recipe.
