Ingredients

This recipe yields 4 to 6 servings. Ingredients are listed for the original recipe, and amounts can be adjusted proportionally, though cooking times remain the same.

  • 3 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 1/2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 2 pounds Yukon gold or red potatoes, cut into 1-inch cubes
  • 3 boneless, skinless chicken breasts
  • 1 (8-ounce) package steam-in-bag green beans
  • 3 tablespoons softened butter, divided
  • 2 tablespoons mayonnaise
  • 1/3 cup freshly grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Directions

  1. Preheat your oven to 425F (220C).
  2. In a bowl, whisk together the lemon juice, lemon zest, olive oil, oregano, garlic powder, 2 teaspoons of salt, and 1/2 teaspoon of pepper until well blended.
  3. Slice each chicken breast in half lengthwise and gently pound to even thickness. Place the chicken in a shallow dish or resealable bag, pour half of the lemon-olive oil mixture over it, and toss to coat. Let it marinate for 30 minutes while preparing the potatoes.
  4. Add the cubed potatoes to the remaining marinade and toss to coat evenly. Transfer potatoes to a lightly greased 9x13-inch baking dish and sprinkle with the remaining salt and pepper.
  5. Bake the potatoes in the preheated oven for 25-30 minutes, tossing halfway, until they are just tender.
  6. While the potatoes bake, prepare the green beans according to the microwave package instructions.
  7. Remove the potatoes from the oven and gently toss in the cooked green beans. Dot the mixture with half of the softened butter.
  8. Place the marinated chicken on top of the potato and green bean mixture. Reserve any remaining marinade in the bowl.
  9. In the bowl with the leftover marinade, combine the remaining butter, mayonnaise, and Parmesan cheese. Spread this mixture evenly over the chicken.
  10. Return the baking dish to the oven and bake until the chicken is cooked through, 20-25 minutes. For a golden top, broil on high for the last 2 minutes.
  11. Garnish with fresh parsley if desired and serve warm.

History of Origin

The One Pan Lemon Garlic Parmesan Chicken is a modern evolution of classic Mediterranean cooking traditions. Its flavor foundationslemon, olive oil, garlic, and fresh herbstrace back to ancient coastal cuisines where simplicity and freshness defined everyday meals. While the exact origin of the one-pan method is difficult to pinpoint, it gained popularity in the late 20th century as home cooks sought convenient yet flavorful dishes. This recipe reflects that shift, merging old-world tastes with contemporary efficiency.

Regional Characteristics

The dish embodies Mediterranean influences, especially those from Southern Italy and Greece, where citrus and garlic are essential pantry staples. Parmesan adds a distinctly Italian character, while the use of chicken breast and green beans gives it an American home-cooking twist. In coastal regions, lemons are used abundantly, lending the recipe its bright, layered acidity. The combination of vegetables and protein in a single pan mirrors the regional preference for balanced, rustic meals.

Differences from Similar Dishes

Unlike creamy chicken bakes or breadcrumb-coated chicken casseroles, this recipe emphasizes freshness and lightness. The lemon-based marinade sets it apart from butter-heavy or tomato-based chicken dishes. The Parmesan topping forms a subtle crust rather than a thick cheesy layer, creating a more delicate profile. Additionally, the one-pan technique differentiates it from stovetop sauted chicken or multi-step roasted meals, making preparation faster and cleanup minimal.

Where It Is Commonly Served

This dish is widely enjoyed in family households, weeknight dinner tables, and casual gatherings. Its straightforward preparation makes it a favorite for meal prep and potluck events. While not typically featured in fine dining, it appears frequently in home-cooking blogs, community cookbooks, and informal restaurant menus that highlight comfort food. Its approachable nature appeals to both novice and experienced cooks.

Interesting Facts

One notable aspect of this dish is its adaptabilitycooks frequently add seasonal vegetables, adjust citrus intensity, or experiment with fresh herbs. The method also became popular among busy home chefs during the rise of sheet-pan cooking trends in the early 2000s. The flavor combination is recognized as universally appealing, blending zesty brightness with savory Parmesan richness. Thanks to its simplicity, it has become a staple in many households' weekly rotations.

Yes. You can marinate the chicken and prepare the potatoes in advance, then refrigerate them until you’re ready to bake. For best results, complete steps up through adding the chicken to the baking dish, cover, and refrigerate. When ready to serve, add the topping and bake.

Yes. Boneless, skinless chicken thighs work well in this recipe. They may take slightly longer to cook, so check for doneness with a meat thermometer (165°F / 74°C internal temperature).

Absolutely. Green beans can be swapped with broccoli, asparagus, carrots, or bell peppers. Keep in mind that cooking times may vary depending on the vegetable.

Marinating adds flavor and tenderness, but if you are short on time, you can coat the chicken in the marinade right before baking. The flavor will be less intense but still delicious.

After baking, switch the oven to broil on high for 2–3 minutes to brown and crisp the topping. Keep a close eye on it to prevent burning.

Yes. You can replace the mayonnaise with Greek yogurt or sour cream for a similar creamy texture. Alternatively, omit it entirely and add a little extra butter and Parmesan.

Red potatoes or Yukon gold potatoes are recommended because they hold their shape and roast well. Russet potatoes can also be used, but they may become softer and slightly crumbly.

If you prefer a milder lemon flavor, reduce the lemon zest and use only half the lemon juice. You can also balance the flavor by adding extra Parmesan or a little creaminess with more butter.

This was very yummy. I added a large onion to the potatoes and sprinkled it them with parmesan cheese as well. Didn't use any zest just some bottled lemon juice and it was great! Awesome, quick midweek meal.

I loved this recipe. Unfortunately, I picked a day to make it that was packed with other chores and ended up winging it. Lots of steps and easy to get confused. I used four chicken breast cutlets, cut in half, three large russet potatoes, cut up small like the video, and a 3 quart casserole, but took longer to bake so that took about 35 minutes in the oven. Doubled the olive oil and added an extra tablespoon of lemon juice because my potatoes more than half filled my casserole dish. Prepared it in the morning up through Step 7, covered and refrigerated it until ready to prepare dinner. Added the topping, sprinkled with paprika, and baked it for 30 minutes. Turned the broiler on high and broiled for three minutes. Was delicious, with just the right amount of lemony tang. A very mild dish. Will make again when I'm less pressed for time.

This was a delicious dinner. I didn't have any green beans, so I threw in cut-up colorful bell peppers with the potatoes at the start of cooking. They cooked for 30 minutes, then I added the chicken and followed the rest of the recipe exactly. The flavors blended perfectly.

This was a little too lemony for me but was very good over all! For me personally I would have liked some of the parmesan cheese on the potatoes too. I will be making this again but with less lemon zest and parmesan cheese added to the marinade. Thank youbso much for a good quick recipe!

It was great, and easy to modify. First time I made this recipe I added carrots to roast with potatoes and omitted beans (what I had on hand). After it was done cooking I realized I forgot to add the butter and top the chicken with mayo/cheese mix. Still really good. Second time I made this I followed the recipe. Again, it was a hit! This recipe is a keeper in this house.

I loved the flavors of this recipe. My husband was not a fan, because of the strong lemon flavor. I think with some editing he will be a fan as well. Perhaps less lemon and add a more subtle flavor. Orange?

I will definitely make this again. There was a bit of confusion as in the video onion powder was used and in the written recipe there was garlic powder. The video showed fresh garlic being added to the marinade but again no fresh garlic mentioned in the recipe. My chicken breasts were very large so we ended up with 8 pieces. They came out so juicy and the lemon really brightened everything up. The potatoes were perfect. Totally a great recipe. So happy to have found it.

This recipe is so delicious! You need to make it. The chicken comes out very moist and flavorful. The potatoes absorb the lemony flavor of the marinade. I cant explain it but this recipe is easy to make and will become one of the recipes you add to your weekly rotations.

Really good flavors! Always hunting for a different recipe, especially for chicken. Boyfriend who doesn't particularly care for green beans called it a home run. Made it as written.
