Ingredients
- 2 bananas, mashed
- cup milk
- 2 cups all-purpose flour
- 3 teaspoons baking powder

- 2 eggs, beaten
- 1 tablespoon margarine, melted
- 1 quart vegetable oil for frying
- cup confectioners' sugar, or as needed
Directions
- Step 1: Gather all the ingredients to prepare the fritter mixture.
- Step 2: In a large mixing bowl, combine the mashed bananas and milk.
- Step 3: Sift in the flour, baking powder, and salt into the banana mixture.
- Step 4: Add the beaten eggs and melted margarine, and stir everything together until well combined.
- Step 5: Heat the vegetable oil in a large, deep skillet to 365F (180C).
- Step 6: Carefully drop spoonfuls of the fritter mixture into the hot oil. Fry the fritters, flipping them once, until they turn golden brown. This should take about 5 minutes.
- Step 7: Remove the fritters from the oil and drain them on a paper towel-lined plate to remove excess oil.
- Step 8: Dust the fritters with confectioners' sugar and serve warm for the best taste.
