100% Fruit "Cake" Recipe

Watermelon Fruit Cake

Ingredients:

  • 1 seedless watermelon
  • 2 cups strawberries, hulled and sliced
  • 1 cantaloupe, seeded, peeled, and sliced (Optional)
  • 1 fresh pineapple, peeled, cored, and sliced (Optional)

Directions:

  1. Begin by cutting 3 slices of watermelon, each 1 to 2 inches thick, across the center of the melon.
  2. Trim the rind from the watermelon slices and place the largest slice onto a cake plate.
  3. Next, layer the fruit: alternate sliced strawberries, slices of cantaloupe, and pineapple slices on top of the watermelon slice.
  4. Place the second-largest watermelon slice on top of the fruit layer.
  5. Repeat the process to form a layered fruit stack resembling a cake.
  6. Thinly slice the remaining melon and pineapple. Use cookie cutters or a sharp knife to cut the fruit into decorative shapes.
  7. Decorate the tiers of the fruit cake with these fruit shapes and any remaining berries.
  8. Refrigerate the cake until ready to serve.
  9. When serving, use a sharp knife to slice the cake into wedges and transfer each wedge onto a plate.

Cook's Note:

I used defrosted and drained blueberries, which worked well. Chopped grapes also made a nice addition as a "salsa" on the side. You can sprinkle shredded coconut on top for added decoration.
