Cookie Butter Cookies Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
Original recipe (1X) yields 24 servings:
- cup butter, softened
- cup brown sugar
- cup white sugar
- cup speculoos cookie butter, such as Biscoff
- cup peanut butter
- 2 cups all-purpose flour
- 1 egg
- teaspoon baking soda
- teaspoon baking powder
- teaspoon salt
- cup white sugar
Directions
- Preheat the oven to 350F (175C). Line a baking sheet with parchment paper.
- In a large bowl, beat the butter, brown sugar, and cup white sugar with an electric mixer until smooth.
- Add the speculoos cookie butter and peanut butter to the mixture and beat until fluffy.
- Mix in the flour, egg, baking soda, baking powder, and salt until the dough comes together.
- Roll the dough into teaspoon-sized balls.
- Spread cup of sugar into a shallow dish. Roll the dough balls in the sugar to coat them, then arrange them on the prepared baking sheet.
- Press the top of each dough ball twice with a fork, forming a crosshatch shape.
- Bake in the preheated oven until golden brown, about 12 minutes.
Cook's Note
Trader Joe's has their own version of speculoos cookie butter. If you'd like to add an extra twist, you can stuff the cookies with leftover cookie butter by placing teaspoon portions of the cookie butter on a cookie sheet, freezing them for 30 minutes, and then rolling the cookie dough around them!

If you haven't experienced it yourself, why choose to give a negative review? That's unfair. I believe cookie butter is a unique specialty product from Trader Joe's. Incorporating it into cookies is a brilliant idea that adds a delicious twist.

I modified the recipe slightly for a cookie exchange and the results were fantastic! I increased the amount of cookie butter to 1 cup and omitted the peanut butter to let the cookie butter flavor shine. Additionally, I added 1 tsp. of cinnamon to enhance the taste. The feedback was overwhelmingly positive, with everyone comparing the cookies to Cinnamon Toast Crunch. Delicious!

I brought these to a party and they were a big hit! I added half a teaspoon of cinnamon to the dough, which made it come together quickly. Initially, I found that a teaspoon seemed too small for measuring, so I switched to a 50 scoop and baked them for a little longer. The smaller size would be perfect for a lovely afternoon tea. Following the suggestion from a previous review to use a meat tenderizer mallet instead of a fork to make indentations was a brilliant idea. I will definitely be making these again.

I have tried this recipe twice now, and the second time around, I decided to use a full cup of cookie butter instead of half a cup each of cookie butter and peanut butter. The flavor was so much richer and more decadent. For an extra crispy texture similar to Biscoff treats, I recommend flattening the cookies with a meat mallet before baking them for a full 12 minutes. The result is wonderfully crispy and pairs perfectly with a cup of coffee or tea. I will definitely be making these again!

Try out the filled version recommended in the chef's notes - it's absolutely amazing! Enclose the frozen filling in dough and shape into balls.

I had been hearing a lot about Cookie Butter, so during my visit to Trader Joe's today, I decided to finally give it a try. Anticipating its sweetness based on what I had heard, I would caution those who do not have a sweet tooth to steer clear! I believe my granddaughters are going to adore this treat! The recipe instructions and measurements were perfect, right down to the amount of sugar needed for rolling the dough before baking. I used natural peanut butter, and I was curious if this would affect the cookies' texture, perhaps making them flatter compared to the traditional type. Baking for 11 minutes, I made half a batch and managed to get 16 cookies using a 4-teaspoon sized scoop. To add a decorative touch, I used the meat tenderizer side of my mallet to create a pattern on the cookies. I am considering trying the recipe again with all peanut butter but using cookie butter for the filling as suggested by the recipe submitter. I followed the recipe exactly but opted to bake them for only 10 minutes, as I'm not sure how accurate my oven is. Taking another reviewer's advice, I used a meat tenderizer on the cookie tops instead of making fork criss crosses. The cookies turned out looking and tasting fantastic.

These treats are absolutely delicious and simple to prepare. The only change I made was using Trader Joe's Cocoa Almond Butter in addition to the cookie butter. It resulted in a unique flavor that I found irresistible!

Having discovered this recipe, I made a trip to Trader Joe's in Knoxville to get the cookie butter. Following the instructions precisely (as I always do before sharing a review), I found the recipe to be good. However, I believe substituting Nutella for the peanut butter might enhance the flavor even more. The peanut butter seemed to be too dominant, overshadowing the cookie butter taste. I plan to try this substitution next time to see how it affects the outcome. I've also come across a recipe online for homemade cookie butter, though I've yet to test it out. This recipe turned out fantastic! I increased the amount of peanut butter by using the fresh honey roasted peanut butter from Whole Foods and added a touch of vanilla. I might consider adding some applesauce next time though, as it turned out a bit dry. Overall, this is an excellent recipe!

I haven't tried making these cookies yet, but you can find Cookie Butter at WalMart, Biscoff, and the WalMart brand. Surprisingly, my daughter prefers the WalMart brand over others. You can also buy it at World Market. We enjoy it on toast, crackers, and Biscoff cookies, which is the main ingredient. It's a versatile and delicious spread.
