Guinness Ice Cream Recipe

Irish Stout Ice Cream

Ingredients
- 2 cups heavy whipping cream
- 1 cups whole milk
- 1 cup white sugar
- 1 vanilla bean
- 6 egg yolks, beaten
- 1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness)
Directions
- In a saucepan, combine the cream, milk, and sugar over medium heat. Stir occasionally until the sugar has completely dissolved, about 5 minutes.
- Use a sharp knife to split the vanilla bean lengthwise. Scrape the seeds into the cream mixture and place the pod in the saucepan as well. Bring the mixture to a boil, then remove from heat. Discard the vanilla bean pod.
- In a separate bowl, beat the egg yolks. Gradually whisk in 1 cup of the hot cream mixture to temper the yolks.
- Return the egg yolk mixture to the saucepan and cook over medium heat. Whisk constantly for about 2 to 3 minutes, or until the mixture thickens slightly and coats the back of a spoon. Do not allow the mixture to boil.
- Transfer the cream mixture to a bowl and let it cool. Refrigerate for at least 2 hours, or overnight, until chilled.
- Meanwhile, in another saucepan, simmer the Irish stout beer over low heat until it reduces to about 2/3 cup, which will take around 15 minutes. Chill the stout syrup for at least 2 hours or overnight.
- Once both the cream mixture and the stout syrup are chilled, whisk them together in a bowl.
- Pour the mixture into an ice cream maker and freeze according to the manufacturers instructions.
- Once the ice cream has finished churning, transfer it to an airtight and store in the freezer until ready to serve.
Recipe Tip
If you prefer, you can substitute 1 teaspoon of vanilla extract for the vanilla bean.
