Chocolate Covered Potato Chips Recipe

Servings: 16 servings

Ingredients:

  • 1 pound high quality milk chocolate, chopped
  • 8 cups ridged potato chips

Directions:

Step 1: Place about 3/4 of the chopped chocolate into a heat-safe bowl. Set the bowl over a pan of simmering water. If available, use a double boiler. Heat the chocolate, stirring occasionally, until it has fully melted.

Step 2: Once the chocolate has melted, continue to heat it until it reaches 110F (43C), stirring occasionally. If needed, you can use a meat thermometer to check the temperature if your candy thermometer does not go that low.

Step 3: As soon as the chocolate reaches the correct temperature, remove it from the heat. Stir in the remaining chopped chocolate and keep stirring until it is fully melted.

Step 4: Continue stirring until the melted chocolate cools to 90F (32C). You can check the temperature by touching a small amount of chocolate to your lip - it should feel cool.

Step 5: Using tongs, dip each potato chip one at a time into the melted chocolate, making sure it is fully coated.

Step 6: Place each chocolate-coated potato chip on a sheet of waxed paper. Start at the farthest edge from you, and work your way in to avoid dripping chocolate onto finished chips.

Step 7: Allow the chips to cool until the chocolate sets. If desired, you can refrigerate them to speed up the process.
