Avocado Oatmeal Cookies

Ingredients

  • 1 avocado, mashed
  • cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cups all-purpose flour
  • tablespoon baking soda
  • teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup chocolate chips
  • cup raisins

Directions

  1. Preheat the oven to 325F (165C).
  2. In a large bowl, beat together the mashed avocado and sugar using an electric mixer until the mixture is creamy and mostly smooth.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Stir in the vanilla extract until well combined.
  5. In a separate bowl, combine the flour, baking soda, and salt. Gradually stir this dry mixture into the avocado mixture until well blended.
  6. Add the oats and stir until fully incorporated.
  7. Fold in the chocolate chips and raisins, ensuring they are evenly distributed throughout the dough.
  8. Spoon dough onto ungreased baking sheets in cookie-sized portions, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden.
  10. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
