Avocado Oatmeal Cookies

Ingredients
- 1 avocado, mashed
- cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cups all-purpose flour
- tablespoon baking soda

- 3 cups quick-cooking oats
- 1 cup chocolate chips
- cup raisins
Directions
- Preheat the oven to 325F (165C).
- In a large bowl, beat together the mashed avocado and sugar using an electric mixer until the mixture is creamy and mostly smooth.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the vanilla extract until well combined.
- In a separate bowl, combine the flour, baking soda, and salt. Gradually stir this dry mixture into the avocado mixture until well blended.
- Add the oats and stir until fully incorporated.
- Fold in the chocolate chips and raisins, ensuring they are evenly distributed throughout the dough.
- Spoon dough onto ungreased baking sheets in cookie-sized portions, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
