Ingredients
- 3/4 cup white sugar
- 2 tablespoons lemon zest (from 2 large lemons)
- 3 tablespoons olive oil
- 1/2 teaspoon ground turmeric
- 4 ounces cream cheese, at room temperature

- 3/4 teaspoon baking soda

- 3/4 cup confectioner's sugar
Directions
- Combine white sugar and lemon zest in a small bowl. Rub the lemon zest into the sugar using your fingertips or the back of a spoon until the sugar becomes moist and light yellow. Set this mixture aside.
- In a large bowl, whisk together olive oil and turmeric. Let the mixture stand for about 1 minute.
- Whisk in the sugar-lemon mixture, cream cheese, egg, and vanilla extract. Continue whisking for 2 to 3 minutes until the mixture becomes smooth and light.
- Mix in the baking soda and salt until fully combined.
- Add the flour and stir gently with a spatula just until the flour disappears into the dough. Do not overmix.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes, or up to overnight, until the dough firms up and is no longer sticky.
