Oatmeal Chocolate Chip Lactation Cookies Recipe

Oatmeal Chocolate Chip Cookies

Ingredients
  • 4 tablespoons water
  • 2 tablespoons flaxseed meal
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 4 tablespoons brewers' yeast
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats
  • 1 cup chocolate chips
  • 2 tablespoons honey (Optional)
Directions
  1. Preheat the oven to 350F (175C).
  2. In a small bowl, stir together the water and flaxseed meal. Let it sit for about 5 minutes until it thickens.
  3. Using an electric mixer, beat the softened butter and both sugars in a large bowl until the mixture becomes creamy.
  4. Add the eggs, one at a time, beating well after each addition. Then add the flaxseed mixture and vanilla extract, mixing until well combined.
  5. In a separate bowl, whisk together the flour, brewers' yeast, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  7. Stir in the oats, chocolate chips, and honey (if using) until evenly distributed.
  8. Using a spoon, drop rounded portions of dough about 2 inches apart onto ungreased baking sheets.
  9. Bake in the preheated oven for 12 to 15 minutes, or until the edges of the cookies are golden brown.
  10. Remove from the oven and transfer the cookies to wire racks to cool completely.
