Oatmeal Chocolate Chip Cookies
Ingredients
- 4 tablespoons water
- 2 tablespoons flaxseed meal
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 4 tablespoons brewers' yeast
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups oats
- 1 cup chocolate chips
- 2 tablespoons honey (Optional)
Directions
- Preheat the oven to 350F (175C).
- In a small bowl, stir together the water and flaxseed meal. Let it sit for about 5 minutes until it thickens.
- Using an electric mixer, beat the softened butter and both sugars in a large bowl until the mixture becomes creamy.
- Add the eggs, one at a time, beating well after each addition. Then add the flaxseed mixture and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, brewers' yeast, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
- Stir in the oats, chocolate chips, and honey (if using) until evenly distributed.
- Using a spoon, drop rounded portions of dough about 2 inches apart onto ungreased baking sheets.
- Bake in the preheated oven for 12 to 15 minutes, or until the edges of the cookies are golden brown.
- Remove from the oven and transfer the cookies to wire racks to cool completely.
