Pumpkin Swirl Brownies Recipe
Ingredients
Pumpkin Cream Cheese:
- 3 ounces cream cheese, softened
- 1 tablespoon butter, softened
- cup white sugar
- 1 cups pumpkin puree
- 3 tablespoons maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- teaspoon ground ginger
- 2 tablespoons all-purpose flour
Brownies:
- cup boiling water
- cup unsweetened cocoa powder
- teaspoon instant espresso powder
- 2 tablespoons boiling water
- 2 ounces unsweetened chocolate, finely chopped
- cup vegetable oil
- 2 tablespoons vegetable oil
- 4 tablespoons unsalted butter, melted
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 1 cups white sugar
- 1 cups all-purpose flour
- 1 teaspoon salt
- 6 ounces bittersweet chocolate, cut into -inch squares
Directions
Step 1: Preheat the oven to 325F (165C). Grease a large baking pan and line the bottom with aluminum foil, leaving a 1-inch overhang on all sides. Grease the foil as well.
Step 2: In a medium mixing bowl, beat together the cream cheese and butter on high speed for about 30 seconds until well combined. Add the sugar and mix until smooth.
Step 3: Beat in the pumpkin puree, maple syrup, egg, vanilla extract, cinnamon, and ginger into the cream cheese mixture until fully combined. Stir in the flour and set the mixture aside.
Step 4: In a separate bowl, whisk the boiling water, cocoa powder, and espresso powder until smooth. Add the finely chopped unsweetened chocolate and whisk until completely melted.
Step 5: Whisk in the vegetable oil, melted butter, eggs, egg yolks, and vanilla extract. Continue to whisk until the mixture is well combined.
Step 6: Mix in the white sugar, followed by the flour and salt. Fold in the bittersweet chocolate squares.
Step 7: Spread the brownie batter evenly into the prepared pan. Spoon the cream cheese mixture on top in several mounds.
Step 8: Use a knife to gently swirl the cream cheese mixture into the brownie batter, creating a marbled effect.
Step 9: Bake the brownies in the preheated oven for about 50 minutes, or until the center is set and a toothpick inserted comes out clean.
Step 10: Allow the brownies to cool in the pan on a wire rack. Once cooled, use the foil to lift the brownies out of the pan and slice them into squares.
