Easy Cake Pops Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. Original recipe (1X) yields 50 servings.
- 1 (15.25 ounce) package yellow cake mix (such as Betty Crocker)
- 1 cup water
- 3 eggs
- cup vegetable oil
- 1 (8 ounce) package cream cheese, softened
- Lollipop sticks
- 1 (14 ounce) bag chocolate confectioners' coating
Directions
Step 1: Preheat oven to 350F (175C). Grease a 9x13-inch baking dish.
Step 2: In a bowl, beat together cake mix, water, eggs, and vegetable oil using an electric mixer on low speed for 30 seconds. Then increase the speed to medium and continue beating until the batter is smooth, about 2 minutes more.
Step 3: Pour the batter into the prepared baking dish and bake in the preheated oven for 28 to 33 minutes, or until a toothpick inserted in the center comes out clean.
Step 4: Let the cake cool completely, at least 1 hour.
Step 5: Once the cake has cooled, crumble it into a large bowl and mix in the softened cream cheese until well combined.
Step 6: Roll the cake mixture into 40 to 50 quarter-sized balls.
Step 7: Insert a lollipop stick into each cake ball and arrange them on a baking sheet. Refrigerate for at least 30 minutes, or until chilled.
Step 8: In a microwave-safe glass or ceramic bowl, melt the chocolate coating in 15-second intervals, stirring after each, until completely melted, about 1 to 3 minutes.
Step 9: Dip each cake ball into the melted chocolate, coating it thoroughly. Arrange the dipped cake pops back onto the baking sheet to dry.
Recipe Tips
- Any flavor of cake mix can be used in place of the yellow cake mix.
- The cooking instructions for the cake are based on using a Betty Crocker cake mix. If using a different brand, follow the instructions on the box.
- You can use different food colorings for the chocolate. For example, white chocolate bark can replace regular chocolate bark, and adding a drop of red food coloring will create a pink coating.
