Brownie Cheesecake Cupcakes Recipe

This delightful dessert combines the best of both worlds: rich, fudgy brownies and creamy cheesecake in every bite. Perfect for a quick indulgence, these muffins are sure to satisfy your sweet tooth.

Ingredients

  • 1 (18.4 ounce) package brownie mix (such as Pillsbury)
  • cup oil
  • 2 large eggs
  • cup water
  • 1 (8 ounce) package cream cheese, softened
  • cup white sugar
  • 3 tablespoons butter, softened
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract

Directions

Step 1: Preheat your oven to 350F (175C) and line a 12-cup muffin tin with paper liners.

Step 2: Prepare the brownie batter by mixing the brownie mix, oil, eggs, and water in a bowl until well combined.

Step 3: In a separate bowl, prepare the cheesecake batter by blending the cream cheese, sugar, butter, flour, and vanilla extract until smooth.

Step 4: Spoon the brownie batter into the muffin cups, filling each about halfway.

Step 5: Top each muffin with a spoonful of cheesecake batter.

Step 6: Spoon a bit more brownie batter over the cheesecake layer. Reserve any leftover brownie batter for another use.

Step 7: Bake in the preheated oven for 20 to 25 minutes. Check doneness by inserting a toothpick into the center of the brownie portion; it should come out clean.

Step 8: Remove the muffins from the oven and let them cool on a wire rack before serving.

Delicious! I followed the baking instructions on the brownie box and took the advice to add an egg to the cheesecake mixture. If I were to make them again, I wouldn't use the paper liners as a lot of the brownie stuck to them. Next time, I'll just make sure to spray the muffin tin well. I also topped each cupcake with a drizzle of store-bought caramel and chocolate glaze, which added a nice finishing touch. Overall, they were incredibly tasty!

I used a fudge brownie mix to make these cheesecake brownies. Taking into account feedback that the cheesecake layer lacked flavor, I added 2 eggs to it. I baked a full dozen brownies, using up all of both batters. The recipients were blown away by how delicious they were. I definitely plan on making these again!

One word: amazing! I will certainly be making these again, but I will double my batch to 24 cupcakes. I made them for a bake sale, and they sold out in less than an hour. They are super delicious! I used the mocha brownie Pillsbury mix, 18.75oz or something like that. It had this incredible coffee/cheesecake flavor to it. So delicious!

I was quite let down by the outcome of these treats. The cheesecake filling had a strange texture in contrast to the brownie, which was a bit off-putting. I believe that swirling the cheesecake filling into the brownie batter would result in a more successful combination. They were simple to prepare, but didn't offer anything exceptional. While they were edible, it's not something I would choose to have again.

These turned out really well. If you're expecting a traditional cheesecake flavor, you might be let down as they don't taste like cream cheese. Making a true cheesecake requires more than just sweetening cream cheese, or you can opt for premade filling from the store. Nevertheless, these bars are delicious as they are!
