Lemon Syllabub Recipe
Original Recipe Yield: 6 servings
Ingredients
- 1 cup heavy whipping cream, chilled
- cup white sugar
- cup white wine
- 2 tablespoons fresh lemon juice
- 1 teaspoon grated lemon zest
- teaspoon ground nutmeg (or to taste)
- 6 thin slices lemon
- 6 sprigs fresh mint
Directions
- Begin by beating the heavy whipping cream and sugar together in a chilled glass or metal bowl using an electric mixer. Continue until the mixture starts to thicken.
- Gradually add in the white wine, lemon juice, and lemon zest. Keep beating the mixture until it becomes light, fluffy, and smooth with no grainy texture.
- Cover the bowl and refrigerate the mixture for at least 30 minutes to allow it to chill and set.
- When ready to serve, take six chilled parfait glasses and spoon the whipped mixture into each glass.
- For garnish, add a thin slice of lemon and a sprig of fresh mint to each parfait glass.
Optional Variation: Syllabub Punch
If you prefer a drinkable version, skip the chilling step after whipping the cream and instead keep adding white wine to the whipped mixture until it reaches your desired drinking consistency.

I added limoncello to my juice to make 3/8 cup of liquid. I also used less sugar to whip the cream. The combination was excellent with raspberries!

While I have some reservations about advising parents to give their children a small amount of wine, I must commend Sarah-neko for sharing this recipe. It's essentially a fancy whipped cream, which is actually a good thing! It's simple to make and received many compliments when I served it at a dinner party recently. I opted to use a mix of Splenda and sugar, adding the sugar first and then the Splenda once the peaks were stiff. I selected Pacific Rim Dry Riesling for its affordable price and balanced taste. I intend to keep this recipe in my regular rotation. Thanks once more!

Light and refreshing after a filling meal. I might try another wine pairing next time as I'm not entirely sold on the wine and whipped cream mix. I enjoyed serving this during the Christmas season, garnishing it with three raspberries and a couple of mint leaves, which added a beautiful touch to the presentation.

I remember making this dish years ago back when we were still living in the UK. I had completely forgotten about it until I came across this recipe while looking at lemon recipes on this site. It's indulgent and decadent, but incredibly tasty. You don't need to have a lot of it (let's be honest, it's not the healthiest choice!) but as an occasional treat... it's absolutely delicious!
