Pineapple Lush Cake Recipe
Ingredients
This recipe is based on the original yield and is designed to serve 10. Ingredient quantities can be adjusted, but cooking steps and times remain the same. Not all recipes scale perfectly.
- 1 (20 ounce) can Dole crushed pineapple, undrained
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 cup thawed whipped topping
- 1 (10 ounce) round angel food cake, cut horizontally into 3 layers
- 1 cups seasonal berries, or to taste
Directions
Step 1: In a medium bowl, combine the undrained crushed pineapple with the instant vanilla pudding mix. Stir gently until fully blended.
Step 2: Carefully fold in the thawed whipped topping until the mixture is smooth and creamy.
Step 3: Place the first layer of the angel food cake on your serving plate. Spread a generous portion of the pineapple pudding mixture over the cake.
Step 4: Repeat with the remaining cake layers, spreading the pudding mixture between each layer and finishing with a layer on top.
Step 5: Cover and refrigerate the assembled cake for at least 1 hour, or until ready to serve.
Step 6: Just before serving, garnish the top with fresh seasonal berries for a burst of color and flavor.

I make this for the diabetics in the family by using sugar free angel food cake, no sugar added crushed pineapple, sugar free pudding and sugar free coolwhip. Since even though it looks awesome with the angel food cake sliced like this, by the time you take out two or three slices out it is a mess so instead I use the trifle bowl and cube up the angel food cake then layer the cake and pudding mix. It is much easier to serve that way and everybody loves it.Huge hit and everybody wants it for the family get togethers.

Loved this! I brought this to a dinner hosted by a friend and it was a hit with several enjoying second helpings. Very light tasting and, if you use light whipped topping and reduced sugar pudding, it is a sin-free treat! I'm a trifle fan so I followed the trifle reviewer's suggestions and then layered 1/2 each of the cake cubes, pineapple/pdg/topping mixture, and then strawberries before repeating the layers again. Then to finish it off and make it look fabulous, I used an additional 1 cup of whipped topping and plopped it on top, decorating with halved large strawberries. Delish!!

This dessert could not be any simpler to make. I did take the advice of some and layered it in a trifle bowl rather than on a plate like a cake. I'm glad I did as it tends to pack down as it sits in the fridge. As an alternative to fruit on top, I made a packet of jello, allowed it to set and then gently mashed the jello before piling it on top of the dessert. I like the contrast it added in flavor and texture. Will make again, for sure!

Sorry wish I would of taken a photo before placing it outside in my fridge. I made it for my best friends mom's after service. With this heat I thought something refreshing to enjoy should be enjoying for the loved ones gathering celebrating the everlasting life of their mother. I actually had bad luck in finding the 10oz of angel food cake, so I only found an 8 oz and went ahead and bought 2 doubling the amount of cake yet they were small in dimension as well. So I cut them only in 2's totalling 4 slices. And because I did that I used a cup and about a half of whip cream to the pineapple mixture to make sure there was going to be enough coverage and there was plenty. This cake has been made at least 3 or 4 times and every new group ends up loving it. My best liking of this is the process and what little ingredients it takes to make such a delicious dessert. 😋 I also have substituted everything sugar-free when I was considering a few loved ones who were diabetic and no one knew the difference, so hats off to you for this deliciousness recipe and thank you so much for sharing.

Instead of using a pre-made angel food cake, I made it using a vanilla cake mix and stirred in a can of drained crushed pineapples, 4 eggs, milk and melted butter. I used 3 cake pans. I garnished with strawberries. It was very delicious and received a lot of compliments on this cake. Will definitely make it again.

I make this Ina 9×13 dish. I slice the angel food cake & put half the sliced cake on bottom of dish. I put half the pudding/pineapple/ cool whip over slices, then use remaining slices and cool whip mix on top. I then cover the top with blueberries & strawberries. It is much easier to serve and transport if necessary. I have also varied the fruit. Sometimes I will use peaches or add banana.

I have made this many times. I use the sugar-free jello and no sugar added pineapple. It is awesome. I do not make the layered cake anymore it is too messy and not cute after it's sliced. I usually cute the cake then do a dollop of the cool whip topping with sprinkle sliced strawberries. Yummahhhhh

Love this recipe! I also break angel food up in big glass bowl then layer everything. Instead of the one cup whipped topping I used entire 8 oz bowl. will make this over and over again.

It was good for an easy, quick summer dessert but I wouldn't serve it to guests. I used a sour cream pudding cake as the store was out of angel food cake. I think this actually made the cake better than it would have been. I used strawberries in the middle layer and on top. The pudding mixture was fine- it was just pudding mix though.

When I make this I tear up the cake and layer it with the other things in a 9X13 pan or a bowl.

I like to serve with sliced cake and the pineapple mixture on the side. I like to put a bowl of strawberries and blueberries on the side along with whipped cream.

I have made this numerous times for my family. It is an easy but delicious dessert. Very light and refreshing. The only difference is that I cut slices of the angel food cake and let people put however much they want on top.

Absolutely delicious, light summer dessert! Great for July 4th with strawberrries and blueberries! Agree with other commenters that it's better and less messy done like a trifle, or with the fillings served on the side.
