Cherry Cheesecake Brownies Recipe
Ingredients

Original recipe (1X) yields 18 servings
Brownies:
- 1 cup butter
- 2 cups white sugar
- cup cocoa powder
- 4 eggs
- 2 teaspoons vanilla extract
- 1 cup gluten-free all-purpose baking flour
- teaspoon gluten-free baking powder
- teaspoon salt
Cheesecake Mix:
- 1 (8 ounce) package cream cheese, softened
- cup white sugar
- 1 egg
- 1 (21 ounce) can cherry pie filling
Directions
Step 1: Preheat the oven to 350F (175C). Grease a 9x13-inch baking pan.
Step 2: Melt the butter in the microwave for about 1 minute. Stir in the sugar and cocoa powder until well combined.
Step 3: Add the eggs, one at a time, mixing well after each addition using an electric mixer. Stir in the vanilla extract.
Step 4: In a small bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the batter and mix until smooth and fully incorporated.
Step 5: Pour the brownie batter into the prepared baking pan and spread it evenly with a knife or spatula.
Step 6: In a separate bowl, beat together the cream cheese, sugar, and egg until smooth and creamy.
Step 7: Dollop the cream cheese mixture on top of the brownie batter, then gently swirl together using a knife to create a marbled effect.
Step 8: Separate the cherries from the jelled filling and place them on top of the cream cheese mixture, saving any leftover jelly for another use if desired.
Step 9: Swirl the cherries into the cream cheese layer using the knife to blend slightly.
Step 10: Bake the brownies in the preheated oven for 35 to 45 minutes, or until set and the edges pull away from the sides of the pan.
Step 11: Remove the brownies from the oven and allow them to cool completely before cutting into bars.
Cooks Note
These can be made with regular all-purpose flour instead of gluten-free flour, but the baking time may need to be adjusted slightly.

After my initial failed attempt at making these brownies following a gluten-free recipe sans instructions for conventional brownies, I switched to my trusted Hershey's Ultimate Chocolate Brownies recipe that I've been using for the past three decades. The addition of a cherry cheesecake topping elevated the ordinary brownies to a luxurious, gourmet treat. Opting for low-fat Neufchâtel cream cheese instead of full-fat cream cheese added a delightful texture and flavor. While I deduct one star for the incomplete instructions, this recipe surpasses a 5-star rating when paired with your preferred brownie recipe. I wholeheartedly endorse this dessert.

One suggestion: I would recommend doubling the Cheesecake Mix. The layer turned out quite thin when following the original recipe. If you decide to stick to the same amount, I would suggest using half the quantity of cherries (even though I adore cherries!)

A few points to mention about this recipe. 1) The cheesecake topping was more abundant than anticipated, covering a larger area on top than depicted in the promotional photos. 2) Instead of discarding all the jelly-like substance from the cherry pie filling, consider incorporating some of it into the brownies. 3) I found that baking this dish required approximately an hour, exceeding the 35-45 minutes recommended in the recipe.

The recommended baking time is not accurate. After baking for an extra 20 minutes, the result was a molten cake - very gooey in the center with a crisp exterior.
