Prune Cake Recipe

Prune and Pecan Cake with Icing

Original Yield: 12 servings

Ingredients

Cake:

  • 1 cup pitted prunes
  • cup water
  • 2 cups all-purpose flour
  • 1 cups white sugar
  • 1 tablespoon ground allspice
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 eggs, lightly beaten
  • 1 cups chopped pecans

Icing:

  • 1 cup white sugar
  • cup margarine
  • cup buttermilk
  • 2 tablespoons corn syrup, such as Karo
  • 1 teaspoon vanilla extract

Directions

Step 1: Heat prunes and water in a small saucepan over medium-high heat until it reaches a boil. Once boiling, reduce heat to low and let simmer until prunes become tender, about 5 minutes. Drain and set aside.

Step 2: Preheat the oven to 350F (175C). Grease and flour a fluted tube pan, such as a Bundt pan.

Step 3: In a large mixing bowl, whisk together the flour, 1 cups sugar, allspice, baking soda, nutmeg, cinnamon, and salt.

Step 4: In a separate bowl, combine the vegetable oil, 1 cup of buttermilk, and lightly beaten eggs. Stir this mixture into the flour mixture until fully incorporated.

Step 5: Using an electric mixer, beat the drained prunes into the batter (the mixer will break them up a bit). Stir in the chopped pecans.

Step 6: Pour the batter into the prepared pan and bake in the preheated oven for about 45 minutes, or until a tester inserted into the center comes out clean.

Step 7: Allow the cake to cool on a wire rack for at least 10 minutes before proceeding to the icing step.

Step 8: For the icing, combine 1 cup sugar, margarine, cup buttermilk, corn syrup, and vanilla extract in a saucepan. Bring to a boil over medium-high heat. Let it boil for a full 5 minutes, stirring occasionally.

Step 9: Once the cake has cooled, invert it onto a serving platter and pour the hot icing over the top.

Georgia Lady, I grew up making this, also. It is so moist and rich. If you try it, you will enjoy and possibly fall in love with it! I also made one similar to it with drained canned purple plums. It was so moist it was almost a pudding. I won a blue ribbon with this at the fair. The fact that it says "prune" makes people shun it. If you just call them plums, the think it is amazing! And they are correct. Thanks for sharing a truly tasty treat. I hope people will try it.

This cake is tremendously delicious. My family and I love it, and I have made it several times. We like to call it 'plummy cake' because it is so rich, and it is, after all, made with 'plums'. It is one of those nice, old-fashioned cakes filled with fruit and nuts. The icing is splendid too. I have found that the amount of icing made by the recipe somewhat drowns my cake. However, the last time I made it, I cut the icing recipe in half, and it was the perfect amount.

I did make this today but added some dates along with the prunes. I only had self -rising flour and I used that and my cake turned out great in a Bundt pan. I used butter instead of margarine in the frosting. The frosting is runny as you pour it over the cake. Just put your cake in a dish that has a slight indentation to catch the frosting. As it cools it gets thicker and I just used a rubber spatula and scooped from bottom of dish and pulled it back up onto the sides. It will eventually cover it as it cools. Very good recipe.

My mom made this cake also..but she poured the icing over it hot in the tube pan and let it soak into the cake..it really made a difference.. Thank you for the memory and recipe

I can't say it's the best cake I ever had but it was tasty. Very easy to make and spiced just right. I used a mixture of prunes and dried apricots and it worked out fine. I cut the nuts down to one cup. The cake was nice and moist. I made a cream cheese frosting to go on it. Everyone went back for seconds. I would make it again. A perfect cake for autumn with a hot cup of coffee.

This was always a favorite of mine as well. My mother always made it in a 9x13 and used black walnuts instead of pecans. Can't wait to try in as a Bundt.

We loved this cake, especially my husband who has to eat prunes for dietary reasons. Very moist. I reduced the sugar to one cup, as my husband is pre-diabetic, and eliminated the nuts which he doesn't like baked in desserts. Excellent!

I baked this cake exactly like the recipe and it turned out very dense didn't rise at all. Made some changes by adding 1tsp baking powder , a stick of butter and a total of 3 eggs also 1 3/4 cups buttermilk. The cake came out perfect fluffy moist. With the few changes I'll be making every year at the holidays!

Great cake, brings back childhood memories! I made it in a regular cake pan and doubled the prunes. I didn't have buttermilk so I used 2% and added a couple tbsp of butter. I drizzled a piece of it with raspberry sauce and white chocolate sauce. Then ate my next piece plain. Both were great!

This prune cake is excellent!! I made it because I had a lot of prunes given to me by my mother-in-law. My husband wasn't too excited when I told him what type of cake I was making but he loved it! I also brought it to a potluck and they devoured it.

This is my first post after being a frequent visioyr to this site for several years. This was so good and came out so perfect I felt that I had to post. I had made it once before, and I remembered that I liked it. Don't know what was different this time except maybe I had an electric oven then. Now thankfully, I have a gas oven i brought a large piece to a friend who found himself having to suddenly go into assosted living. When je was younger he worked for a while in his brother's bakery. He loved it! And I guess je gave a fellow resident a taste. I got awsaage saying she wanted to know how much I would charge for either a piece or a whole cake!
