Grandma's Chocolate Zucchini Brownies Recipe
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- teaspoon salt
- cup butter
- 1 cups white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini
- 2 tablespoons white sugar
- 1 cup chopped walnuts (optional)
- 1 cup chocolate chips
Directions
- Preheat your oven to 350F (175C). Grease a jelly roll pan with butter or cooking spray.
- In a bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the butter and 1 cups of sugar with an electric mixer until smooth and creamy.
- Add the eggs, one at a time, mixing thoroughly after each addition. Add the vanilla extract with the second egg and continue to mix.
- Gradually incorporate the sifted flour mixture into the wet ingredients, stirring gently until just combined.
- Carefully fold in the shredded zucchini, ensuring it is evenly distributed through the batter.
- Pour the batter into the prepared pan, spreading it evenly with a spatula.
- Sprinkle the top of the batter with the remaining 2 tablespoons of sugar, chocolate chips, and walnuts (if using). Press down lightly.
- Bake for 25 to 30 minutes, or until the top appears dry and the edges of the cake begin to pull away from the sides of the pan. A toothpick inserted into the center should come out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

I have made this recipe several times and it always turns out great. I double the amount of cocoa powder and make sure to pat dry some of the excess moisture from the zucchini with paper towels before incorporating it into the batter. I usually get 24 brownies from this batch. These aren't chewy brownies, so if that's what you're after, this recipe won't fit the bill. However, they are delicious chocolate zucchini bars that completely mask the presence of zucchini.

This recipe is fantastic! I froze shredded zucchini from last fall in 2-cup portions and it worked perfectly in this recipe. I make sure to strain the liquid out before adding it to the batter, and it turns out wonderfully. I don't have a "jelly pan," so I use a regular 8 x 8 pan and bake for approximately 30 minutes. Overall, a great recipe!

This recipe is fantastic! I reduced the sugar to just 1 cup, added half a cup of mini chocolate chips on top, and omitted 2 tablespoons of almond glaze. It turned out delicious!

I had some leftover shredded zucchini from baking Zucchini Bread and decided to try out this recipe. I didn't bother sifting the ingredients, was a bit casual with the measurements, and used a 9x13 pan. The result? Absolutely delicious! It turned out more like a cake than a brownie, but the flavor was amazing. I omitted the walnuts but the topping was fantastic. It takes all my willpower not to sneak a square every time I pass by the kitchen :)

Incredible! I swapped out the butter for coconut oil, which meant they needed a bit more time in the oven, but they came out absolutely delicious. Just like other reviews mentioned, they have more of a cake-like texture than a traditional brownie.

Followed the recipe to the letter and the result was fantastic. The texture is reminiscent of sponge cake and it's incredibly moist. To me, it tastes like a luscious red velvet cake. I will definitely be making this again.
