White Chocolate Amaretto Cake Recipe

Ingredients:

  • 1 (18.25 ounce) package yellow cake mix
  • 4 eggs
  • 1 (3.3 ounce) package instant white chocolate pudding mix
  • cup cold water
  • cup vegetable oil
  • cup amaretto liqueur
  • teaspoon almond extract
  • cup butter
  • cup water
  • 1 cup white sugar
  • 1 (16 ounce) package vanilla frosting
  • cup blanched slivered almonds

Directions:

Step 1: Preheat your oven to 350F (175C). Lightly grease a 10-inch non-stick Bundt pan with oil.

Step 2: In a large mixing bowl, combine the cake mix, eggs, instant white chocolate pudding mix, cold water, vegetable oil, amaretto liqueur, and almond extract. Mix everything together until well combined, about 3 minutes.

Step 3: Pour the batter into the prepared Bundt pan, spreading it evenly.

Step 4: Bake the cake for 45 minutes to an hour, or until a toothpick inserted into the center comes out clean.

Step 5: Once baked, remove the cake from the oven. Using an ice pick or skewer, make as many holes as possible in the cake's surface.

Step 6: While the cake is still warm, drizzle the glaze over it. Be sure to cover the edges and center of the Bundt pan. Allow the cake to cool in the pan for at least 2 hours.

To make the glaze:

Step 7: In a saucepan, combine the butter, sugar, water, and amaretto. Bring the mixture to a boil, stirring constantly. Let it boil for about 10 minutes.

For the topping:

Step 8: Lightly toast the slivered almonds in the oven for 5 to 10 minutes, stirring frequently. Be cautious not to burn them.

Step 9: Heat cup of the prepared vanilla frosting in the microwave for 10 seconds to soften it.

Step 10: Place the cooled cake onto a serving dish. Using a spoon, drizzle the softened frosting over the cake. Scatter the toasted almonds on top before the frosting cools completely.

Instead of using 1/4 teaspoon of almond extract, I doubled it in my recipe. I am currently making it again. Everyone absolutely loved it.

I followed the recipe to a tee. The cake turned out okay, but unfortunately, all the amaretto ended up at the bottom. The flavor was very intense, and the cake itself was extremely dense, especially for a bundt cake. Out of the 12 people who tried it, only one enjoyed it.
